Gnocchi with Cherry Tomato Sauce

This was very tasty! To make it even better though I recommend adding some red wine. I also threw in some marinated artichoke hearts.

Beer-Boiled Shrimp

Wow. Wow. Wow! By far the best shrimp I have ever tasted. Way better than anything I've had in a restaurant. We cooked half with Old Bay and half with Jamaican Jerk seasoning. Both were incredible. Will definitely be making this again.

Roasted Garlic Zucchini and Tomatoes

This was delicious! What a great way to enjoy zucchini. I even left out the parmesan cheese at the end (accidentally) and it was still fantastic. I probably used double the garlic but that's just because I'm a garlic-a-holic. I also used a mix of yellow and red tomatoes, and added oregano. Would definitely make this again!

Pumpkin Pie

The best pumpkin pie ever! This was my first attempt at making a pumpkin pie and I was floored at how easy and delicious it turned was. Wow. I used a premade crust from Whole Woods with no hydrogenated oils, covered the crust with foil for the last 15 minutes or so and the whole thing came out perfect. I'll definitely be making this again. Thanks!

Broiled Lobster Tails

Delicious! I followed suggestions of others and used old bay (my favorite spice) and watched the tails while broiling. Two 5-6oz tails took about 10 minutes. So good!

Green Chile Spinach Quiche

This is one of the best quiches I have ever had! I used the pre-made pie crust from Whole Foods and used fresh roasted green chiles I bought from the farmer's market. I also sauteed 1/2 of a yellow onion with fresh spinach (instead of using frozen spinach) and added that to the mix. Will definitely make this again!

Southwestern Quinoa Salad

Delicious!!! I didn't even have adoba seasoning and it still turned out fantastic...just like the black bean and quinoa salad they make at Whole Foods but better. I used orange pepper instead of green. Can't wait to make this again.

Yum! Great vegetarian alternative to beans and rice. It was great as is, however, I added some smoky salsa and Chipotle Tabasco as well. Oh and some red bell pepper. Fantastic!

Spaghetti with Broccoli and Mushrooms

This wasn't bad, just kind of bland. Perhaps I added too many vegetables but I also included chopped tomatoes, onion, and fresh garlic. I thought that would give it more flavor but it was still lacking. Definitely a quick and easy meal if that's what you're going for, though.

Potato Chowder Soup I

Delicious! This was my first time making a potato chowder and I'm so happy with how it turned out. Like others suggested, I almost double the veggies, used one can of creamed corn, and put half of the vegetable mixture in the blender to thicken up the soup. So great with french bread.

Baked Potato Casserole

Yum! I'm vegetarian so I used soy bacon instead of the real stuff. Also went with low fat mayo and sour cream. In my opinion, it turned out just fine.

Oregon Salmon Patties

These are delicious! And so easy to make. I used 3/4 cup of cracker crumbs and cooked the patties in olive oil. I also sauteed the onion with garlic in olive oil and butter. Will certainly make these again.

Lasagna Alfredo Roll Ups

Yum! I had some leftover cooked lasagna noodles sitting in the fridge and this was the perfect recipe to use them up. As suggested by another reviewer, I used a combination of marinara and alfredo sauce (I used a mushroom alfredo). It was a delicious mix and probably cut out some calories. I forgot to buy spinach so I sauteed a combination of broccoli and kale. I love kale so this was a suitable substitution. I also forgot to buy mozzarella so I topped it with parmesan and it still turned out great. Oh and I used a sweet yellow onion instead of green. Thanks for the recipe!

Quinoa and Black Bean Chili

Delicious! I'm always looking for good veggie chili recipes and this one is one of the best! I added a poblano pepper because I had one in the fridge and sautteed the veggies in olive oil instead of vegetable oil. I would also add more of the chipotle peppers next time. Great recipe!

Alaska Salmon Bake with Pecan Crunch Coating

This was delicious. I followed one review's suggestion and refrigerated the sauce before applying it to the salmon. I think I left it in there too long as it was thicker than I would have liked. Still the flavor was great. I used a spicy dijon mustard and agave instead of honey.

Delicious. Made this for a party and it was the only thing that was completely gone by the end of the night. I did not use poppy seeds, substituted toasted pine nuts for almonds, and only added 1/4 cup of sugar. About to go make some more.
