Vegetarian Chickpea Sandwich Filling

Delicious! I love tuna salad but am trying to cut down on my fish intake. This is a perfect substitute and there are so many variations to make it different each time. Thanks!

Roasted Red Pepper Soup

Very good! I wasn't sure how the mushrooms would add to the soup but they totally work. I used vegetable broth and added a little bit of cream just to make it more bisque-like.

Gnocchi with Cherry Tomato Sauce

Honey Baked Lentils

Southwestern Quinoa Salad

Delicious!!! I didn't even have adoba seasoning and it still turned out fantastic...just like the black bean and quinoa salad they make at Whole Foods but better. I used orange pepper instead of green. Can't wait to make this again.

Winter Lentil Vegetable Soup

Delicious! I added some extra veggies, especially cabbge (I'm obsessed!0 but even as is I'm sure it would still be a great soup. Oh and like some other readers suggested, I sauteed the onion, carrots and celery for a few minutes before putting them in the slow cooker.

Quinoa and Black Beans

Yum! Great vegetarian alternative to beans and rice. It was great as is, however, I added some smoky salsa and Chipotle Tabasco as well. Oh and some red bell pepper. Fantastic!

Spaghetti with Broccoli and Mushrooms

This wasn't bad, just kind of bland. Perhaps I added too many vegetables but I also included chopped tomatoes, onion, and fresh garlic. I thought that would give it more flavor but it was still lacking. Definitely a quick and easy meal if that's what you're going for, though.

Beer-Boiled Shrimp

Wow. Wow. Wow! By far the best shrimp I have ever tasted. Way better than anything I've had in a restaurant. We cooked half with Old Bay and half with Jamaican Jerk seasoning. Both were incredible. Will definitely be making this again.

Potato Chowder Soup I

Delicious! This was my first time making a potato chowder and I'm so happy with how it turned out. Like others suggested, I almost double the veggies, used one can of creamed corn, and put half of the vegetable mixture in the blender to thicken up the soup. So great with french bread.

Baked Potato Casserole

Yum! I'm vegetarian so I used soy bacon instead of the real stuff. Also went with low fat mayo and sour cream. In my opinion, it turned out just fine.

Oregon Salmon Patties

These are delicious! And so easy to make. I used 3/4 cup of cracker crumbs and cooked the patties in olive oil. I also sauteed the onion with garlic in olive oil and butter. Will certainly make these again.

Lasagna Alfredo Roll Ups

Yum! I had some leftover cooked lasagna noodles sitting in the fridge and this was the perfect recipe to use them up. As suggested by another reviewer, I used a combination of marinara and alfredo sauce (I used a mushroom alfredo). It was a delicious mix and probably cut out some calories. I forgot to buy spinach so I sauteed a combination of broccoli and kale. I love kale so this was a suitable substitution. I also forgot to buy mozzarella so I topped it with parmesan and it still turned out great. Oh and I used a sweet yellow onion instead of green. Thanks for the recipe!

Roasted Garlic Zucchini and Tomatoes

This was delicious! What a great way to enjoy zucchini. I even left out the parmesan cheese at the end (accidentally) and it was still fantastic. I probably used double the garlic but that's just because I'm a garlic-a-holic. I also used a mix of yellow and red tomatoes, and added oregano. Would definitely make this again!

Quinoa and Black Bean Chili

Delicious! I'm always looking for good veggie chili recipes and this one is one of the best! I added a poblano pepper because I had one in the fridge and sautteed the veggies in olive oil instead of vegetable oil. I would also add more of the chipotle peppers next time. Great recipe!

Delicious Black Bean Burritos

These are delicious! As a vegetarian, I eat a lot of black beans and burritos and was wondering just how much better these would be than the others. But they really are fantastic. The cream cheese gives it such a nice texture and really helps the flavors come out. As per another reviewer, I added a can of Rotel tomatoes with green chiles and more garlic (3 or 4 cloves). I also used a pretty potent red onion. Didn't have any cilantro on hand but they didn't need it. Frozen corn and rice would be good additions to these burritos.

Colette's Smoked Sausage Fritatta

Made this with veggie sausage, yellow onion, green onion, red pepper, and parsley. I'm very finicky about eggs and this turned out perfectly! On top I also put some veggie bacon which crisped up nicely under the cheddar. It was a great way to use up some leftover veggies in the fridge.
