Easy Microwave Chocolate Cake

Gets the job done regarding choco cravings but would not say it is fantastic. Like others I increased the sugar from 1/4 to 1/2 cup and added more cocoa.

Red Lentil Curry

I didn't have turmeric, curry paste or red lentils but forged ahead anyway, and it worked out great. I wanted to review this recipe because it was a helpful and worthy guide on my first try at lentil curry *plus* I figured there are others like me that were missing some recipe ingredients. If you don't have curry paste I suggest doubling the curry powder and ginger. I also love cumin and included 1 tablespoon instead of a teaspoon. I used half a can of whole tomatoes (which I smashed and then mixed into the spices) -ta da...my non-authentic substitute for curry paste! All other spiced were added as per the recipe. The caramelized onions truly add to the flavors. Last suggestion: If your lentils are not mushy enough to your liking pulse a hand blender in there a couple of times and stir. It added just enough creaminess to the lentils.

Perfect Pumpkin Pie

Made this for my first Thanksgiving outside the US. I don't like pumpkin pie that much but when you make it from scratch -no canned pumpkin- yum! This was a hit with all the guests too.

Broccoli Cheese Bake

I'm living outside the US and far from lots of the canned products used in many Thanksgiving recipes. This recipe is creamy, cheesy and easy to make. I found it to be a great substitute for the cream of mushroom broccoli casserole my mom makes. I added sauteed mushrooms to my dish and some garlic to boost the flavors. Next time I made include a bit of chicken stock too.

Orange Vinaigrette

Szechwan Shrimp

Honey, ketchup?! My partner was taken aback at the ingredients listed in this recipe. But don't be fooled, the end result is the perfect amount of spicy, and pretty good flavors overall. I really like how accessible this Asian recipe is compared to others which require me to spend money on ingredients that won't get used very often in my kitchen (ex: oyster sauce).I confess I did not follow the recipe to the letter. Changes as follows: Used all the ingredients but replaced shrimp with thin slices of chicken. Fresh grated ginger instead of ground, red pepper flakes, added steamed broccoli/carrots and as others recommended doubled the sauce. Overall I am pleased with the results and will probably use this recipe again. Thanks!

One Bowl Chocolate Cake III

Great recipe. It is very moist and tasty but not overly sweet. To me this is the perfect replacement for boxed cake mix. My first attempt at this recipe (and baking a cake from scratch in general) was a success. If you are new to cake baking, try this recipe- it is easy and yields tasty results.

Homesteader Cornbread

Basic recipe, delicious results. I made this to go alongside my homemade chili. The cornbread was tasty, just a bit moist and a touch sweet. I was very pleased with my first attempt at making cornbread (using this recipe). I gave the recipe 4 stars because it is not a gourmet recipe or anything but the simple goodness is worth every bite. I will be using it again.

Easy Chicken Curry

I had never attempted making chicken curry before this recipe. Others have criticized this recipe but I found it to be a great first try at chicken curry. It was flavorful and easy to make. I think this is a good "starter" recipe, I was pleased with my meal.

Baked Soy Lemon Chops

After reading other reviews commenting on the saltiness I chose to reduce the soy to 1/4 cup and also add 1/4 cup water (as others suggested). The flavor was wonderful in our pork.
