Vegetarian Tortilla Soup
Really really good! I thought the frozen vegetables would lower the quality of the soup, but not so! I halved the recipe and made a few changes to make it a bit healthier/tastier: I used a non-stick pan so no oil was needed. I added a can of petite diced tomatoes with chilies/lime instead of crushed. Like some other reviews suggested, I squeezed lime juice into the soup. I left out the cheese. Frozen sweet corn was used instead of canned. Also, I added a diced jalapeno and some cayenne pepper for a kick. Oh, and at the very end, I put a dollop of plain yogurt on each bowl and stirred it in - that gives it a great flavor! This was a winner, I already added the recipe to my permanent collection.

Easy Vegetarian Corn Chowder
This is a great recipe for corn chowder. I really feel that the nutmeg is a necessary ingredient, it works really well in it. Though, I probably used a little less than the recipe called for. I left out the celery and used all milk instead of half-and-half (I just cooked it down a bit). I think this recipe would be even better with a little diced potato and more carrot. Also, don't be stingy with the black pepper.
