Mexican Rice

I would rename this recipe "San Antonio" as opposed to Mexican. Being Mexican myself and making this rice or eating it from relatives in Old Mexico, the recipe does not call for all that spice nor peppers, much less all that tomato sauce. Less than 1 can is enough if you use tomato sauce. And the rice is supposed to be sauteed with the onion in the oil. It sounds good, but I don't think it's kid friendly. It's just another Tex-Mex variation of the traditional recipe.

Creamy Potato Soup

This recipe is wonderful. I added ham and omitted the celery in my soup and it came out just as creamy and delicious as I expected. I will definitely keep this recipe.

Mom's Brown Gravy

Thanks for the idea & base. I am not a vegetarian, so I used 1T bouillon granules, fresh ground pepper, and dashes of ground red pepper to kick it up a notch. However, I omitted the butter and used 2T coconut oil instead. The family loved it and I will continue to make this again.

Pioneer Cookies

I did half a batch with raisins and the other half with chocolate chips. I also used oil instead of butter and the family loved them. My son insists we need to make them frequently.

Raspberry Mousse Cheesecake

I altered the recipe due to my diabetes. I used fat free cream cheese, Splenda instead of sugar, and used the strawberry flavored Cool Whip. Everyone at a gathering enjoyed it as much as I did. This recipe is a keeper!

Baked Tilapia in Garlic and Olive Oil

I didn't have time to marinate and had to substitute an ingredient or two, but even then, it was great! This was the first time I baked fish and it was perfect. I further complimented it with a glass of Chardonnay. Thanks!

Banana Pancakes I

I followed this recipe, but sprinkled a little cinnamon (we love cinnamon) to the dry ingredients. They were a hit! I added pecan pieces for fun and they also turned out great. I used very ripe bananas, so mashing them with the whisk was easy. The batter is a little looser than normal pancake batter, but not by much and I did not have a problem with cooking them. I used a 1/4 cup measure and it worked perfectly. They spread round and even. We make them every time we have ripe bananas (which is rare in my house). UPDATE (9/24/11): For those that thought the batter was too loose, I suggest cutting the milk down to 3/4 cup and increasing the baking soda to 3 teaspoons. It does add for a fluffier pancake and not as loose as the original recipe. I also have used organic whole wheat flour, as it is denser and drier, so it complements the wet ingredients well. This recipe works very well with 100% whole wheat flour.

Egg-Free Low-Fat Oatmeal Cookies

Great recipe. Due to my diabetes, I substituted the white sugar for Splenda, used all natural applesauce, and used dried cranberries instead of raisins. My office loved them and asked me to share the recipe. I did have to flatten the cookies before baking, as they do not spread. Thanks for sharing!

Bananas 'N' Cream Bundt Cake

Delicious! I cut the sugar in half as suggested, used organic whole wheat pastry flour, and added allspice, nutmeg, and cinnamon as suggested by a spice cake recipe. I also used butter and a cinnamon-sugar mixture instead of greasing/flouring the pan. No need for icing, however, my boys poured chocolate syrup on their slices. YUM!!!
