Easy Alfredo Sauce I

I chose this recipe because it is simple. Our tastebuds have been so conditioned by the americanized garbage spat out by Olive Garden and the like, that we don't recognize how delicious simple foods can be. If you watch a cook from the "old country" (choose any country), you will note they use very few ingredients, but the magic is in the technique. My only gripe with the recipe as written is that everything is put in the saucepan at the same time. As other reviewers have stated, do not do this. Heat the cream on medium until slightly bubbling around the edges, where it comes in contact with the side of the saucepan. Add the butter until melted, stirring constantly. Add cheese, a small handful at a time, until melted. Again, stirring constantly. You MUST stand over this and stir it or it will burn on medium and will not come out good. No, you can't put it on low and walk away. We put this on a pizza with some grilled chicken and broccoli for a completely decadent meal. Thank you to the author for sharing such a simple, yet delicious, recipe.

Italian Dressing Mix

This is a super recipe. It may seem like a lot of ingredients, but it takes minutes to prepare. I doubled up to make ~16oz and ran out of canola oil, so ~1/3 is olive oil. I substituted balsamic vinegar and eased up on the salt, only using about 1 tsp. I also added 1/4 tsp of Cayenne pepper for a little kick. It definitely gets better if it sits for a day or so, allowing the dry ingredients to soak and the flavors to blend.

Homemade Black Bean Veggie Burgers

Simply delicious! I love chili powder, cumin and chili sauce, so these were a flavor home run for me. I followed other suggestions and a) pressed the liquid out of the onion, pepper and garlic mixture and b) added more bread crumbs. Baked, on a potato roll with a slice of onion, tomato and lettuce, these were super.

Fluffy Pancakes

This is a super easy recipe that won't disappoint. Let sit for 15-30 mins for a little extra "fluff". I replaced the butter with olive oil and detected no difference in taste. Double the batch and freeze some for later - if they last!!

Turkey Bean Chili

Delicious! I feel less guilty when eating this Chili. 2 "mistakes" I made: I only used 2 cans of kidney beans and 1 pound ground turkey (no one else but me eats chili) and I mistakenly kept the spices the same, but increased the cayenne pepper by a teaspoon (no jalapeno). I like chili heavily spiced, so this was not a problem for me. I did, however, add small amounts of water until I reached the consistency I was looking for. You'll love this right after you make it, but it gets even better the next day!

Baked Haddock

Simple and delicious! An easy, no stress way to add a healthy meal to your repertoire. The only change for us was to add 2 minutes to the cooking time; we like the coating to be crispy. As good as, or better, than any restaurant we've had baked fish at.

Stir-Fried Vegetables with Chicken or Pork

This is a very good, basic stir fry recipe. I stir fry 2-3 times a week and am always looking for new methods/recipes to change things up. I would recommend a few changes, though: reduce the cooking times for your protein (chicken, shrimp, etc...) and vegetables (which I like al dente). I'm on a low sodium diet and found this a bit salty, even without the added salt; I'd suggest reducing the Oyster Sauce to 1 tablespoon mixed with 1 tablespoon of water. Lastly, I added almost a cup of water with the soy sauce and corn starch as I like a lot of sauce. Very tasty, easy to make stir fry!!
