Roasted Brussels Sprouts
I love that such a simple recipe could get almost 2,000 reviews. I can' remember the last time i had Brussels sprouts, although i love most vegetables. Probably goes back many years to a Mom who wasn't much of a cook and probably served them boiled and mushy. I saw them at the store the other day and wondered why i never buy them. So i did and looked for a way to cook them. These were very good i did cut them in half, and i loved the way the loose leafs browned and got crunchy. Next time i think i will tear off more leafs. Again simple is great.

Cilantro-Lime Dressing
Got me at lime and cilantro. I like to make a recipe as close to as written as possible, at least on the first try. I don't use honey, but decided to by some i used a very small amount and glad i did. I made a chopped salad with corn,black beans,green onion,radish and added Cotija cheese and avacado. Added chicken to my husbands. We both liked it wish i would have doubled it but will make again. I also think i added a bit more lime. Like it tangy.

Tasty Fried Eggplant Balls
Wanted a new way to try eggplant so tried this, really liked it although i used what i had. Red and yellow peppers, and Parmesan cheese. Next time i make, i will sauté onion and peppers because the raw onion flavor was a bit strong. But overall really like made a double batch so have been enjoying leftovers. As long as my husband doesn't mind my onion breath,
