Honey Coconut Salmon
I made my version of this several weeks ago and the family is still raving about it! Here are my variations: I couldn't see marinating in all that butter so I salted the salmon and marinated in pinapple juice. Then I discarded the marinade and baked with the honey/coconut sauce on top per the recipie. Great is the only word for it.

Grilled Salmon with Curried Peach Sauce
When I told my family I was making Salmon with Peach sauce, the grandkids made faces, but they've tasted it now and the youngest is asking me to make it for his birthday dinner! They all love it. If it rains, you can bake the salmon in foil packets with made-ahead sauce at 375 for 15-20 min. It comes out jucy and delicious, maybe better than on the grill.

Grilled Salmon I
My family *loves* this dish. The first time I made it, I'd intended to grill the fish, but mother nature intervened (it rained) so I put the fillets in foil packets with a bit of the marinade spooned over each one and baked it at 375 for about 15 min. It came out so well that they won't let me fire up the grill even when the sun is shining! I've made it several times since and now simplify it by putting the lemon pepper, garlic powder and *no* salt (my husband has a heart condition) in the marinade which I make in a plastic bag. Swish it around, add the fish and refrigerate until you're ready to bake. Love it.
