Pumpkin Apple Butter

Delicious! I just cooked in on the stove and halved the recip & made the following substitutions: 1/2 cup canned pumpkin 1 cup applesauce (natural) 1/4 cup raw sugar Few sprinkles of cinnamon Fewer sprinkles of ground cloves I cooked it on slow on the stove, stirring occasionally. Perfect topping for our homemade wheat rolls on this autumn evening.

Our Changes: 6 Yellow Potatoes, quartered 2 frozen salmon fillets 1 small onion, diced Dash of salt and pepper 2 handfuls fresh green beans , cut in half 1 large tomato, diced 2 eggs 2 handfuls spinach Cut the potatoes into fourths. Spray a large skillet with PAM and cook the potatoes on medium heat. Add just enough water to not burn the pan. Place the eggs in a small sauce pan with enough water to cover the eggs. Boil at medium heat. After the eggs are started, add the salmon fillets and onions to the large pan. Add the green beans when close to the end. Boil eggs in a small pan. After about 20 minutes, run cold water over them and peel. Once the eggs are done, everything else should be about done. Dice the tomato and place the spinach, tomato, eggs, and potato-fish-green bean mixture on top. Enjoy!

Brown Rice Breakfast Porridge

This was a great start. I did 1/2 cup brown rice, 1/3 cup plain honey yogurt, 1/3 cup skim milk, 1/3 cup frozen blueberries, 2 tbsp almonds and 1 tbsp honey. Microwave and enjoy...I'll see how it tastes tomorrow for breakfast!

Whole Wheat, Oatmeal, and Banana Pancakes

Additions: Almonds, cinnamon Changes: All whole wheat flour, , 1 cup plain yogurt instead of 1 cup of the milk Omit: Milk powder, oil (don't even need applesauce, just make sure to spray the pan with PAM)
