Caramel Popcorn with Marshmallow

Addicting! I agree with @crowderfamily: the photo that goes with this recipe is all over pinterest, with a different (and inferior) recipe. The Pinterest recipe was a big failure. But THIS recipe is amazing. I am not a fan of microwave popcorn, so that is the only change I made. Instead, I put about 2 Tablespoons of coconut oil in a large pot with 1 cup of popcorn kernels. Then heat over medium or medium high heat (cover with aluminum foil, poke with knife to make ten slits). Shake every half minute or so as they pop. This produced the perfect amount of popcorn for this recipe. You could even use a little less popcorn, if you want it to be REALLY gooey. Dang, can't wait to make this again!

Sugar Cookie Icing

simple and yummy. i added more milk to make it more spreadable. love the slight almond flavor! the icing dries firm and not at all gooey.

New Red Potato Salad

Needs more flavor! this is a good base, but even doubling the salt and pepper didn't do enough. I added fresh thyme and two more eggs. I think next time I will add some Dijon mustard.

Croutons

great croutons!! way better than store bought! i only made a few small changes: melted the butter, added italian spices (maybe 1 tsp?) and garlic salt (about 3/4 tsp) to the butter, then tossed with the bread cubes. it didn't look like enough butter/spices, so i melted an additional 1/8 cup of butter and added more spices & salt. tossed again. then arranged as evenly as possible on a GREASED cookie sheet, cooked at 235 for 30 min, then let them stay in the warm oven for 10 more minutes. they are so crunchy, but not at all hard, if that makes sense... my husband and kids LOVED these, will be making again!

Roasted Broccoli

pretty good broccoli, although the amount of seasoning is a bit too much. has some heat to it, which i like. i didn't have montreal steak seasoning and so i found a recipe for it online: 1/4 tsp garlic powder, 1/2 tsp ground coriander seed, 1/4 tsp sea salt, 1/2 tsp dill weed, 1/2 tsp paprika, 1/2 tsp crushed red pepper, 1/2 tsp black pepper (this makes the 1 Tbl Montreal called for in the recipe). i drizzled the olive oil on the broccoli first, as recommended by other reviewers, then sprinkled with all the seasonings and tossed to coat (i added no extra salt or pepper). i baked for the full 20, but will only do 15 next time. thx for the recipe, it's a keeper!

Sesame Green Beans

Too Much Chocolate Cake

a good cake, but with all the excellent reviews i thought it would be more amazing. i used about 1 1/4 cups sour cream, only 1/2 cup oil, and a combo of mini-choc chips and reg choc chips. the reg size were better, since the mini ones just melted and i couldn't tell they were there at all. the cake was chocolately, but not that chocolatey. it was good enough to make again sometime. i didn't put on any frosting or anything but i think i will next time - to up the chocolatiness (is that a word?)

Lemon Grilled Chicken

good chicken, i might make it again. i added the juice and zest of 2 key limes, in addition to the 1/2 cup lemon juice. i omitted the onion & garlic, and added some fresh rosemary, some garlic powder, onion powder, cayenne pepper and crushed red pepper. it had a little heat to it. i marinated 3 breasts in the marinade for 4 hours. it was fork tender and moist.

Easy Indian Style Okra

ummm, it's really not very good. the inside is slimy, as you chew it. i used a little less butter, and no onion (since i didn't have one on hand). other than that, i followed the recipe closely. not much flavor. battered and fried okra is much better.

Jenny's Grilled Chicken Breasts

i used some fresh lime juice, mixed with bottled lemon juice. this was easy to make. it wasn't super flavorful, but good enough to make again. some of my kids really liked it and my husband thought it was pretty good. great for when you have nothing planned for dinner, since all the ingredients are common pantry items.

Spinach and Feta Pita Bake

this is really good and easy. i have made it twice - once with regular pesto and once with the sun-dried tomato pesto. i really prefer the regular pesto!! i added crumbled bacon (from costco) and i omitted the mushrooms. mmmmmm

Sesame Seared Tuna

yummy. i halved the sesame oil and it was plenty of oil. i sprinkled on the toasted sesame seeds after searing the tuna. i also added the wasabi to the marinade, like others suggested and that was good. i cooked two 5 oz tuna steaks for my husband and i and we would have been happy with half that much. i can only eat so much of raw fish at a time! thinly sliced green onions would be yummy on top - when serving. will make again!

delicious! i followed the recipe exactly. it tastes great, i gave it only 4 stars because it is runny. maybe upping the tapioca amount to 1/4 cup would do the trick? although it is runny, it's something i will make again.
