Mexican Bean Salad

YUM! Everyone loves this recipe. I add avocado's and tomatoes however. A tip when you add the avocado is to keep the pits in the actual "salad" mix to avoid them turning brown and yucky. It works! Enjoy!

Blueberry Zucchini Bread

A big hit! I made mine a little healthier by using applesauce instead of the oil, 1/2 whole wheat flour, added ground flax seed, and cut down the sugar by half. Turned out great! I made several and froze them for later.

Quiche

Very yummy! I added fresh chopped baby spinach, I didn't have pimento peppers and didn't miss them. I also didn't have fresh parsley and that was no big deal, just added dry instead and it turned out great. I added extra seasonings though - garlic, onion powder, dill, freshly cracked pepper. yum.

Slow Cooker Party Mix

I can see this would be a really yummy tasting mix, however I followed the instructions to a "t" except for a shorter "cooking" time and I had a lot of burnt pieces. The other tricky part in the crock pot is every time you want to stir it up, you break the pieces of mix and make crumbs :(. Next time I think I'll stick to the oven...much easier to move around with a spatula and monitor for the potential burnt pieces. :)

Fluffy Biscuits

wonderful! I made these to go along with a crock pot chicken pot pie recipe I have, and they were perfect as the "crust" on the side...yumm! I've made them twice and both times they turned out perfectly. I skipped the rolling and cutting, and simply just made drop biscuits. Easy! I used a food processor and cut in REALLY cold butter, I think that might be the trick.

amazingly moist, a huge hit! I definitely agree with the sifting of the powdered sugar. I will do that next time, as mine had lumps in the glaze...but still fantastic taste!

Empanadas

Huge hit! I loved these! I used half Smuckers Finest Apple Cinnamon Preserve and the other half was same brand but Triple Berry. Both were delicious and chunky - I didn't have the issue of jam oozing out while baking. I will also add that I used the pampered chef "cut-n-seal" and highly recommend it! No, I don't sell pampered chef ;). But it made it super easy and you don't have to moisten the edges or anything just fold and press. I personally liked the apple flavor best, tasted just like a mini apple pie, yum! I didn't roll out the dough either, I'm all about baking short cuts and there really is no need to roll it out, I just pressed it with my hands and it worked perfectly. I will say to be sure to get the dough somewhat thin, otherwise it will be too much dough and not enough filling. I also doubled the recipe and it made about 27 of them. So yummy and I will DEFINITELY be making these again very soon!!!
