Luscious Slush Punch

I made this recipe for Thanksgiving dinner as an alternative to soda. I made 1/2 of the recipe 2 days in advance significantly reducing the amount of sugar. I poured the punch into a gallon zip-loc baggie and placed it in the freezer. Thanksgiving morning, I put the frozen punch in the refrigerator to thaw into a semi-hard slush. Before serving, I poured the slushy punch mixture into the punch bowl and added the chilled soda with orange slices for garnish. My DIL and I also added Moscato to our glasses of punch for an alcoholic beverage. I would make this punch again; great recipe!

Pumpkin Oatmeal Chocolate Chip Cookies

My granddaughters and I made these cookies. We added 1 tsp. of pumpkin pie spice in addition to the cinnamon and only added about 1 cup of the mini chocolate chips so as not to overpower the pumpkin flavor. I like the fact that this recipe used the whole can of pumpkin with the addition of oatmeal. This recipe made a lot of cookies. The extra baked cookies can be frozen or any unbaked dough can be frozen for later use. The cookies turned out moist and chewy rather than cakey!

Apple Squares

I received many compliments from my co-workers for baking these Apple Squares. I doubled the recipe and baked it in a 9x13" pan for 33 minutes. As suggested by other reviewers, I used both cinnamon and pumpkin pie spices, increased the amount of chopped apples (2 medium apples-about 2 1/4 cups for the doubled recipe), and sprinkled the pecans on top. The next time I bake these, I will decrease the white sugar to half as they were just a tad sweet for me! Great recipe and worth a 5 star status!!

Best Grilled Pork Chops

Best grilled pork chops!! I didn't have the lemon pepper seasoning so I substituted 1 Tbsp.lemon juice and 1/4 tsp. pepper. I grilled the pork chops for 5 minutes on each side and they were done perfectly. I will be making pork chops using this recipe again!!

Hummingbird Cake I

Great recipe!! I reduced the sugar to 1 3/4 cups, but the next time, I think I will try using only 1 1/2 cups. Also, to reduce the amount of oil, I always use 1/2 cup canola oil and 1/2 cup unsweetened applesauce. Still moist without all the oil. I also like walnuts in this recipe. I made cupcakes, filling the cups about 3/4 full and baking at 375* for approx. 20 minutes. I sometimes frost the cupcakes with either cream cheese or vanilla buttercream frosting. Wonderful with or without frosting! I have prepared this recipe in a loaf pan for a bread, in cake pans, and a jelly roll pan with the baking times adjusted. Versatile and Excellent recipe!!

Pork Chops to Live For

I have made this recipe in the past, but baked in the oven. This is much easier and doesn't heat up the kitchen. I also peeled and sliced four potatoes then layered them on the bottom of the crock pot (to cover) seasoned with salt and pepper. I placed four browned and seasoned pork chops on top of the potatoes then arranged the onion on top. I heated the mushroom soup(healthy request) in the same pan that I browned the pork chops in and whisked in about 1 soup can of milk until heated through. Pour over the pork chops and cook per the above instructions or until the pork chops and potatoes are fork tender. Add a vegetable, and dinner is on the table!!

Easy, Cheesy Tortellini Bake

This is definitely a 5-star recipe for me. I used a 20 oz. pkg. of cheese tortellini,low fat alfredo sauce, and a jar of pasta sauce with Italian sausage, peppers, and onions because that is what I had on hand in the pantry. Since I don't like the texture of frozen spinach, I used a 6 oz.package of fresh spinach. I divided the recipe between 2, 8 x 8 inch pans-one to bake and one to freeze (without the cheese) and bake later. I also did not broil the tortellini. Instead, I placed the uncovered casserole dish in a 350 degree oven and baked until the sauce started to bubble and the cheese turned golden brown. Each 8 x 8 inch pan serves 4. This recipe is a keeper!

Mom's Applesauce Pancakes

I used the "Bisquick Heart Smart" baking mix. The pancakes turned out thicker that I like so, I will use a little more milk the next time. Good recipe and I have added this recipe to my recipe box to make again. I may try adding mashed bananas in place of the applesauce!

Baked Teriyaki Chicken

Add a another 5 stars! I also prepared this recipe using 1/3 cup soy sauce as suggested by other viewers. I had 3 large boneless chicken which I pounded flat to about a 1-inch thickeness. I poured all of the sauce mixture over the chicken breasts and topped with pineapple tidbits and and coarsley chopped red pepper (that I had on hand) and sprinkled with a few red pepper flakes. The chicken baked for about 35 minutes at 350 degress and was done perfectly....moist and tender. I did baste the chicken with the sauce twice during the baking period. Brown rice and a green vegetable was served with the chicken...delish! I will be preparing this recipe again!!

Beer Margaritas

I'm not especially fond of tequila, but I do love these margaritas. I was skeptical about using the 12ozs. of tequila, but I made it according to the recipe using a "lite" beer in a glass filled with plenty of ice. I was surprised that no adjustments were needed. All who have tried this recipe agreed that this is an excellent recipe. This is the only margarita recipe I will use in the future.

Slow-Cooker Pepper Steak

I rated this 4 stars as I thought it was somewhat bland, but I do think this recipe is a keeper. It is easy to prepare using the crockpot. As others suggested, I also put the onions and peppers in the crockpot about halfway through the cooking time. The next time I make this recipe I will use more garlic and add red pepper flakes.

Lattice Chicken Potpie

Even though this casserole was a little bland as other reviewers noted, one can always adjust the seasonings to suit your taste, and don't forget to season the cooked chicken as well. Also, I didn't have any french fried onions on hand so that was omitted. I still think this recipe deserves 5 stars as it is an easy dish to prepare with basic ingredients. I will prepare this casserole again.

Linda's Lasagna

My son made this lasagna last evening for dinner using the no-boil lasagna noodles. I enjoyed the tomato sauce made from the crushed tomatoes. Just the right amount sauce so the lasagna wasn't dry but not soupy. Very good lasagna!

Hot Fudge Ice Cream Bar Dessert

Even though my family liked this dessert, I thought it was just OK. The peanut butter chocolate sauce was a bit overpowering. I made half with peanuts and the other half with chopped mini peanut butter cups. Most everyone liked the side with the peanut butter cups. I probably will not make this unless my family requests it.
