Apple Cinnamon Oatmeal

Reviewed: Jan. 21, 2014
Very nice recipe! This was WAY better than the last one I tried. I did alter it a bit, but nothing crazy. I upped it to a 3 serving size as its a great amount to make for my daughter (toddler) for the work week. Instead of using the apple juice or applesauce as some reviewers did, I cored an apple and threw it in the Nutribullet with the required water. I also simmered the apples in it for about 3 minutes before adding the oats. Next time I make this, which I definitely will, I'll also add about 1T brown sugar to my simmering apples. This tastes great and I can feel good about giving it to my little one =) Thanks for sharing!

Roasted Brussels Sprouts

Reviewed: Jan. 16, 2014
These were amazing! I did alter the time/temp slightly. I cooked at 400 for the first 15 minutes, then went down to 350 for an additional 15-20 minutes to accommodate something else I was making. The only thing I would do differently next time is use a little bit less salt. Maybe an 1/8 tsp next time.

Vini's Pork Roast

Reviewed: Nov. 25, 2013
Very happy that I tried this! I doubled the spice rub ingredients, except for the salt-I used 2tsp salt. I also used beef stock instead of water for the sauce. Paired with mashed potatoes and steamed baby carrots. Was fantastic and super MOIST! I normally stay away from cooking pork, but this will be on my dinner table monthly now! MMMM!

Mahogany Chicken Wings

Reviewed: Aug. 21, 2011
Not liked by anybody in the house. The sauce flavor didnt seem to penetrate the chicken. A true waste of chicken wings. Good thing I made a batch of our "normal" wings.

Feta and Bacon Stuffed Chicken with Onion Mashed Potatoes

Reviewed: May 21, 2011
This dish was amazing! It was well worth the mess it left me with in the kitchen lol! I have never tried feta as I cannot get past the smell, so I used shredded cheddar instead. A major hit at my house! It made me think of Sunday dinners at my Grammas house when I was a kid! Thank you =)

Simple Turkey Chili

Reviewed: May 17, 2011
I used 2 cans of kidney beans instead of just one. I mashed the 1st can and put the 2nd can in whole. This was very good. I served this over waikiki cornbread and topped with shredded cheddar and a few splashes of Franks. The best turkey chili recipe I have tried so far.

African Chicken Stew

Reviewed: May 17, 2011
I personally didnt get to eat any of this as I was sick, so Im reviewing for my DH. I used chicken broth instead of water. I ended up having to use about 20oz so the dish wouldnt be too dry. It definitely wasnt visually appealing to us, it looked quite nasty LOL! DH said it was just OK, definitely wouldnt be something he would ask me to make again.

Elaine's Sweet and Tangy Loose Beef BBQ

Reviewed: May 2, 2011
I used a 3lb top round roast and cut the recipe in half. Before putting meat into crock, I cut it into chunks as I do with my pulled pork. Meat was so tender and just fell apart after 5 hours on low, but I still let it go for about 8 hours total before serving on fresh rolls. Add a splash or two of Franks to your sammy and YUMMY!

Easy, Cheesy Tortellini Bake

Reviewed: Apr. 23, 2011
I think it goes without saying that if you dont like an ingredient you simply omit it! With that being said, my family LOVED this recipe! I used about 3/4 of the box of spinach and it was just right. I also didnt use as much mozzarella as called for, maybe only 2oz instead of 8oz. And I sprinkled it on right before serving as well. Dinner was out of the ordinary and delicious!

Mongolian Beef and Spring Onions

Reviewed: Apr. 11, 2011
Instead of using the soy sauce/brown sugar, I used 1C of "ABC's Sweet Soy Sauce". (I always have some of that on-hand!) I know I altered it, but I still have to give this recipe 5 stars! It was amazingly delicious! Definitely a keeper! Thanks for sharing!

Linguine Pasta with Shrimp and Tomatoes

Reviewed: Apr. 6, 2011
DH enjoyed it more than I did. He liked that the sauce was different than most red sauces we have. Me on the other hand, I think it would have been WAY better if I just used a jar of Francesco Rinaldi. Maybe I should have spent a little more money on the wine? Either way, Im giving 4 stars for my husband. He was soo excited to taste it after smelling it for so long! LOL

Creamiest Rice Pudding

Reviewed: Mar. 10, 2011
I cut the recipe in half. I used skim milk and added some raisins before letting it set. The only thing I would do different next time is to cut out some of the sugar as it was way too sweet for me. UPDATE I had to change my rating because I made this rice pudding a 2nd time with half the amount of sugar and it is PERFECT! I still used skim milk and raisins. I dont think I'll ever try another recipe! This ones a keeper!

I wouldnt say that this formed a batter, but it was a nice coating and it tasted great! Nice idea to add the onions as well. Will definitely use this again!

Slow Cooker Salisbury Steak

Reviewed: Feb. 21, 2011
I made a few changes, but it was fabulous, so I have to share! I couldnt find dry au jus @ my local store so I used dry beefy onion soup mix. I couldnt get myself to use crm of ckn soup, so I used cream of mushroom instead with an equal amount of beef gravy. Also sliced up about 10oz of fresh mushrooms. AMAZING! I will never buy pre-made salisbury steaks again!

Creamy Potato Lasagna

Reviewed: Feb. 19, 2011
I cut my potatoes into crinkled coins and they were cooked perfectly. We all liked this dish, until we hit the brick wall. There just came a point when we all stopped eatting because it no longer seemed tasty. I know it sounds weird. Maybe it was just too rich to be served as a meal

Spanish Potato Omelet

Reviewed: Feb. 10, 2011
We thought this was pretty good. Its a keeper! I didnt use as much olive oil as the recipe stated, probably used 6T. I put the tomatoes and green onions on the omelette before it was completely cooked. Instead of flipping I covered and cooked on low til it was done. Oh, and I threw on some shredded cheddar. Thanks for sharing!
