Italian Peas

I have never been a big fan of English peas, but this recipe has put them on my list of favorite sides! Only substitution I made was to use shallots in place of the onions. Really good! Thanks so much for sharing.

Easy Pumpkin Muffins

For ease alone, this recipe rates 5 stars. There really isn't a need to add anything additional to this recipe - no eggs, water or oil. I took the suggestions of other cooks and used a spice cake mix & canned pumpking pie fillilng. No need for any additional spices. I've made 3 batches thus far, adding chopped Cranraisins, and pecan chips. They're delish! A single recipe will make 24 mini muffins plus 2 jumbo muffins. I've used foil cupcake liners and paper ones and they've all turned out very well with no sticking. Try glazing them with the Orange Drizzle icing found in another recipe on this site (Mini Pumpkin Muffins w/Orange Drizzle). If you want a quick, warm treat, try microwaving for 15 seconds. Taste just like they've come right out of the oven. Cindy, thanks or sharing this wonderful, economical recipe.

Happy Shrimp

I took the suggestions of others and used olive oil instead of butter, 2/3 C fat free half & half instead of 1/3 C heavy cream. Served over whole wheat angel hair pasta. Delicious! Thanks for sharing!!!

Chili Rellenos Casserole

Very good. I followed advice of previous reviews and added 4 eggs, a 12 oz. can evaporated milk, enchilada sauce, 3 tablespoons of flour and left out the 1/2 C milk. Consistency was smooth and so creamy tasting. Thanks for sharing!

Buffalo Chicken Sliders

Delicious and so easy! I used Kings Hawaian Whole Wheat Mini Rolls, and Lite Ranch Salad Dressing to dip them in. Lot's of heat from Frank's Buffalo Sauce & the finely chopped carrot and celery give it a very pleasing crunch. Thanks for sharing!

Overnight Apple Cinnamon French Toast

I rated this a 3 based on appearance. I think I followed the recipe exactly, but even after letting it rest for at least 10 minutes, the topping stuck to the pan and the dish just looked awful. A generous sprinkle of powdered sugar took care of that, and it was very tasty. Don't know if I'd try this one again.

Fra Diavolo Sauce With Pasta

I doubled the recipe, used about 10 tablespoons of minced garlic, 4 cans diced tomatoes w/Italian seasoning, added an additional 1-1/2 lbs. shrimp and sea scallops (halved). Fed 5 hungry adults with enough leftover to feed 4 lucky people the next day. Really great recipe !

Balsamic-Glazed Salmon Fillets

We didn't care much for this recipe. Although we love all of the ingredients, the ratio of vinegar to honey, Dijon and wine seemed "off". Would not make again. Thanks anyway!

Baby Back Ribs

Crown Roast of Pork with Sausage Stuffing

Prepared this recipe for Christmas dinner and everyone loved it. Hardest part was finding the steamed chestnuts, so I used roasted chestnuts in a jar that I found at a specialty market. Also couldn't find the frilly "panties", but cherry tomatoes worked pretty well to finish dressing it. Thanks for sharing.

Ultimate Breakfast Casserole

I've served this several times to guests and always get compliments. I use Ore Ida O'Brien hashbrowns because they already have green peppers and onions, so I eliminate the onion in the original recipe. I also use Hormel Real Bacon Bits sometimes instead of chopped ham and it is equally good. I also add 6 eggs instead of 3.

Chutney Baked Brie

The combination of flavors sounded interesting so I served this as an appetizer to our guests at Thanksgiving. Didn't get as many rave reviews as when I prepare the brie with sun-dried tomatoes, pesto, crumbled bacon and spring onions, but I thought it was very flavorful and is an alternative for those who don't care for tomatoes or pesto.

Reuben Dip

I'm not sure I followed the recipe exactly because it didn't specify whether to use canned corned beef or deli, so I opted for the deli and finely chopped up the beef instead of shredding it. Can someone tell me if canned corned beef works as well? If you like Rueben sandwiches, bet you'll enjoy this dip too.

BLT Dip

Easy & delicious! I've made this dip several times and have discovered it is absolutely essential to use a high quality prepared mayonnaise like Hellmann's. I serve this on a bed of shredded lettuce with sliced, toasted French baguettes and get compliments every time. Thanks for sharing!

Tuscan Soup

Another keeper. The only alteration I made was adding about 1 tablespoon fennel seeds while the soup was simmering. (Enhances the Italian flavor.) If you like full flavored comfort food, double the recipe - you're going to want another bowl tomorrow and the day after that too!!!
