I use this recipe a LOT. I found that I need to add a tbsp of cornstarch to get it thick enough for me, but I have to say that I like my curd to be pudding-like rather than spreadable.
I was looking through the reviews and found some said it had a weird taste. The best advice I can give is to never let the curd come in contact with metal, which is why I love this recipe. I put the ingredients in a plastic container and even stir with a plastic fork. I don't even strain it because my strainers are metal.
