Delicious Ham and Potato Soup

This is the best potato soup I've made. Loved by children and adults alike. After cooking the potatoes, I took about a third out, mashed them and threw them back in to give the soup more body. Because I always add extra vegetables to everything I cook, I added carrots and corn, and some parsley and a bay leaf. Yummy!

Hearty Caesar Salad

Omitted the egg, skipped the bacon (a few vegans at the table) and it was still fabulous. The dressing is excellent! Made croutons with the Garlic Crouton recipe on this site which I highly recommend. Only change I'd make next time is maybe go with a half teaspoon of pepper rather than the full teaspoon. Thank you for a great salad!

Marinated Pork Tenderloin

Used this recipe to marinate a 4 pound boneless pork loin I roasted in the oven with carrots and potates and WOW, never have I seen people so excited about a roast. Was nervous about the amount of cinnamon being overpowering so just used a few shakes and it was the perfect amount. Just enough to make the house smell divine and the gravy taste uniquely delicious. Substituted balsamic vinegar for the sherry (didn't have any), used a little less sugar than called for, and added a few sprinkles of cayenne. DEFINITELY use the marinade as the gravy base! Brought it to a boil, added pan juices, and thickened with cornstarch/water. I doubled the marinade recipe for the roast and might triple it next time because everyone went crazy for it. A keeper for sure.

Cheesy Broccoli Rice Casserole

Excellent - used what I had on hand (white rice instead of wild, breadcrumbs instead of onion rings). Baked in the oven at 350 for about 45 minutes. (Added about a half a can of milk because I was worried it would dry out.) Was devoured by my husband, children and grandchild. Don't be afraid to use more broccoli than called for to yummily sneak even more veggies into your diet. Good stuff.
