Garlic Red Potatoes

Oh these are SO good! I wouldn't suggest these to anyone who might be on a diet. But, Mmmmm, lemon butter is so good.

Greek Chicken

This was so tasty! I'm always afraid of over-lemoning so I only used one lemon (which ended up being about 1/4 cup) and it was perfect. I used 5 cloves of garlic and let it marinate for about 6 hours. I cooked the chicken at 400 degrees for 45 minutes and then put it under the broiler for about 2-3 minutes to get the skin nice and crispy. Oh my gosh this was SO good!

Mediterranean Chicken Orzo

This recipe is great! I always forget how much I love basil and it goes so well with the chicken and tomatoes. I cook my own chicken breast rather than the pre-cooked stuff, so it takes a bit longer. But all in all it's a fast, easy, and light summer dinner. And sooo yummy!

Stuffed Peppers with Turkey and Vegetables

This was really yummy and great for lunch the next day. I'm not a fan of any kind of bell peppers, so I used pasilla peppers instead. Mmmm. I sauteed the onions first in some olive oil and when they were transluscent I added the turkey, then followed the recipe from there (set the turkey aside and cooked the rest of the veggies). I followed another reviewers idea of not pre-baking the peppers and just stuffed them with the filling, and put them in the oven at 350 for about 30 minutes. They turned out great! The only thing I was disappointed in was the turkey. Even with all the vegetables added to it, it was really bland and tasteless. My husband and I loved everything else though.

California Grilled Veggie Sandwich

This sandwich is wonderful! It's true, you will not miss the meat. I used rosemary and garlic french bread instead of focaccia the first time and it was perfect. I used focaccia the second time I made it and didn't like how it fell apart. So from now on I'll use french bread. Mmmmm. Just thinking about it is making my mouth water.
