Black Beans and Pork Chops

Reviewed: Aug. 10, 2012
I added a can of cream of chicken soup, as I like a lot of gravy, and probably about 1 1/2 cups salsa. The flavors were there, but it still lacked something. Unsure if I'll make this again.

Easy Skillet Beef and Hash Browns

Reviewed: Nov. 21, 2013
This was really good. With the beef I threw in a stalk of celery, about half of an onion, a few cloves of garlic and seasoned the mix with seasoned salt and pepper. I used a packet of french onion soup mix and also added cayenne pepper, garlic powder, salt, pepper and a quarter-cube of chicken bouillon. Oh, and I tossed in a Goya Sazon packet and a Goya ham concentrate packet. Instead of ketchup I used A1. I had some Simply Potatoes southwestern style on hand, they worked fine. This may sound complex, but the flavors married quite well. I plopped six heaping tablespoons into two flour tortillas topped with sharp shredded cheddar. Very tasty and savory.

Matt's Chicken Adobo

Reviewed: Nov. 25, 2013
This was awesome. I didn't have peppercorns on hand but I just eyeballed everything else. I'd also browned some sausage to put into some dirty rice, and I sauteed the mashed garlic cloves in the grease. Used a slotted spoon to remove the garlic then used some water to get the yummy bits out of the skillet. That went into the chicken sauce. It was delicious. I like a lot of flavor though, so I probably used quite a bit more soy sauce and vinegar than most people. Thank you. :)

Cha Cha's White Chicken Chili

Reviewed: Dec. 3, 2013
This was really good. I gave the four stars because I omitted the cayenne, jalapeno and chile peppers. I added cinnamon and chili powder instead. I used a can of cannelloni beans and a can of chili beans. I took some chicken thighs and simmered them for an hour. Shredded them, put them aside. I browned some sausage, drained it and used a tablespoon or so of the grease to saute the onions, garlic and green bell pepper with the seasonings. I dumped the mixture of chicken, sausage, veggies and beans into a big pot with a can of cream of chicken soup mixed in. I used the reserved chicken broth and eyeballed it, adding a small amount here and there; enough so that I was happy with the consistency. A thick, delicious meal served over rice.
