This recipe is irresistible!! I didn't make any changes to it - it's perfect as is! I made this during one of the first weeks of summer to and made fish tacos with it all and it couldn't have gone over better!

Brunch Enchiladas

Four stars as is, five if you spice it up! I doubled the recipe, using 1 lb. of regular sausage, 1 lb. of spicy sausage to help give it a kick. I also added red, green and yellow bell peppers when the sausage was almost fully cooked and let it all simmer together. I served with some jalapenos and hot salsa and no one could get enough of it! The chopping is the only time-consuming part - quick, easy, DELICIOUS recipe to keep for group breakfasts/brunches.

My roommates and I can't stop eating these! These are very unique cookies, so they'll catch people's attention, and they're DELICIOUS, so be ready to give out the recipe! I followed the recipe exactly and they turned out perfect.

Turtle Cake II

THIS.IS.INCREDIBLE! I followed the suggestions from other reviewers, topped with caramel sauce, chocolate sauce and leftover pecans, and the cake turned out absolutely perfect. I have absolutely no complaints. It was SUPER rich, so eat it with a glass of milk :) Everyone who tasted it asked for the recipe, and I'll definitely be using this recipe for years to come! USE IT!

Cranberry Pecan Muffins

These were incredible!! Due to bad planning, I was missing nutmeg and only had 3/4 ofsour cream so I used about 1/4 cup of buttermilk with it. For the topping I used cinnamon and sugar on half of the muffins and left the rest plain and either way was delicious. I couldnt find fresh canberries so i bought bigger dried ones that were still somewhat juicy and cut them in half. It worked really well. I made these for a birthday breakfast and everyone LOVED them and begged foe the recipe. I'll be making these regularly from now on - they're sure to impress!!

Cajun Dirty Rice

Made this for a group of friends and they scarfed it down!! I don't usually like spicy foods but this was WAY too good to not eat! I actually used 3 packages of rice and forgot to triple the rest of the parts of the recipe, but it was incredible. Everyone's been stopping by for the leftovers. DEFINITELY a keeper!

N'Awlins Stuffed Bell Peppers

Loved this!! Made this for a group of friends and they raved about it! I used 12 oz. of stuffing so it wouldn't be as dry, blanched the peppers before cooking, and baked it with about 1/4 in. of water in the bottom. It was definitely moist, and perfect when reheated for leftovers. I paired it with some Cajun Dirty Rice and cornbread... a new favorite meal!
