Heather's Beef Enchiladas

This was a nice change from traditional flavored enchiladas. The only change I made was slightly less cayenne pepper since my kids are not into spicy foods. These had a unique flavor. The mixture filled 8 8-inch tortillas.

Creamy Slow Cooker Potato Soup

I doubled this recipe and it fed our family of 3 big eaters and 3 small eaters with a few servings left over for lunch the next day. The only changes I made were 2 use evaporated milk instead of regular milk and 1/3 less fat cream cheese.

Chicken Enchilada Soup III

This was fairly easy to make. I used frozen chicken and boiled it instead of thawing, then browning. I followed others' advice to slowly add the masa harina. I used a ten ounce can of enchilada sauce, which perhaps made it a bit too spicy for the kids, but those of us who like spicy thought it was great. We put a dollop of sour cream and some tortilla strips on top.

Sweet and Chunky Tomato Soup

I didn't know how good tomato soup could be! I cut off the tops of the tomatoes and scooped out the pulp instead of peeling, and that was easy.

Chicken Stew With Coconut Milk

I love yellow curry from Thai restaurants and was wanting something similar. This was the only recipe I could find that had similar ingredients. This was easy to do and I did cook it on the stove. I had to add a loy more curry, as well as a jalapeno to get it to my liking. Overall, this was a good starter recipe.
