Grilled Corn on the Cob

This was ok. Everyone seemed to like them even my nieces and nephews. Made a perfect contribution to our 4th of July dinner. I actually baked mine the night before...had to work early that day, so no times to grill. Thanks for the recipe.

Fresh Tomato Pie

Made a few changes here or there since I didn't have a few of the ingredients. Just used the ingrediets I had available. I mixed in a little cream of chicken soup to the mayo to add a little something extra. It smelled great....I did't taste...these were given as gifts to Grandad and Father-in-law as a thank you for giving me tons of fresh tomatoes from their personal gardens this summer. Thanks for the recipe.

Butter Flaky Pie Crust

It turned out ok. I was out of shortening so using butter was a good substitute. I made an apple pie for my hubby and several fried pies for Grandad using this crust....tasted ok even if they did look like a big hot mess, because I lack an easy hand and, well, skill with pastry. Eggless Chocolate Cake I

For a 3 yr old with an egg allergy, these were great. i made them for a July 4th celebration so my niece would have a sweet treat and she loved them. I made cupcakes instead of sheet cake. It made a lot of cupcakes. For me, its hard to get used the eggless taste. I'm so used to baked goods with eggs. Although my hubby calls eggless cakes "the lets go green cake", he ate and enjoyed one or two. I added a cup of sugar, because I found the batter bland. I frosted them with an eggless vanilla frosting...a recipe I found on another site. My niece had chocolate all over her face and hands.....thanks for the recipe.....they were a hit.

Chicken and Rice

I really liked this recipe, but I made some changes. I cooked Tyson chicken tenders in vegetable oil after seasoning with McCormick BBQ seasoning, black pepper, dash of salt and a touch of garlic powder (which makes up my spice collection :). I didn't have instant rice, so I cooked white rice per directions in chicken broth instead of water with a little butter. I then mixed the rice with a large can of cream of chicken soup, a little mayo, onion soup mix, and a little water, because I didn't have cream of celery. I placed the chicken in a greased dish and spread the soup and rice mixture over the chicken. I cooked it on 350 for 20 minutes, sprinkled a little shredded cheese over the top and cooked for an additional 5 minutes. I didn't add the peas, because we served some on the side. This made for a perfect contribution to a meal that my extended family is taking to a relative who is sadly under the weather. With the added side dishes of the peas, a pan of bread, and my Mom's blueberry delight (yummo!), this should make a perfect dinner. I made my hubby a smaller version of this dish and he agreed that it tastes GREAT :) Thanks for the recipe :)

Grandma's Famous Salmon Cakes

I followed this recipe to the letter today. These were delicious. I'm following a high protein/ low carb diet and these fit the rules exactly. If the salmon is well drained there's no need for adding flour which is not on my diet. The cakes were easy to form... much like hamburger or ground turkey. Ok, there 's one thing, I didn't remove the bones. They are soft and a great source of calcium. You cannot even taste them or feel a different texture. I made a sauce to go with them out of mayo, Louisianna hot sauce, Bragg vinegar, black pepper and garlic powder. No measuring, whipped it together to taste. Just stirred sauce ingredients....no cooking. Yummo! Had a green salad on the side. Your grandma's recipe should be famous....it was so good. I'm thinking of trying it with crab instead of salmon sometimes. Thanks for sharing!!!! :)
