Angel's Old Fashioned Beef Stew

Reviewed: Jan. 10, 2002
My husband said this is the best stew He's ever had. He doesn't say things like this often! I also used celery salt in place of the celery, used baby carrots, more potatoes. I didn't have enough beef broth so I added some water and did the "thickening" suggested 1/2 hour before done. Thank You Angel!

Apple Yam Casserole

Reviewed: Jan. 14, 2002
This is fabulous...my daughter and I ate it for days. Instead of simply putting in rasins...I put in Sunmaid's "Golden's and Cherries" sooooooo good. update 2008...7 years later, we're still lovin' it!

Chicken Makhani (Indian Butter Chicken)

Reviewed: Apr. 14, 2003
This was so delicious. My moroccan husband and two children cleaned their plates. This is so delicious. My husband would have liked a lot more "spice" so if you like spice be sure and kick up the red pepper a few notches but it was great as was for the kids. I was really impressed with this. Did I mention this was so delicious?

Carrot Cake VI

Reviewed: Apr. 22, 2003
I did not like this at all. I gave it two stars because it was edible. I suppose I had more of a carrot cake in mind than what this turned out to be.

African Sweet Potato and Peanut Soup

Reviewed: Apr. 25, 2003
My husband, who is a native Moroccan, really enjoyed this soup. I found it to be quite "different" and sweet potatoes out of the context of "sweet" was new for me. I most enjoyed dipping bread in it. ;)

Awesome Carrot Cake with Cream Cheese Frosting

Reviewed: Apr. 27, 2003
Dangerously Delicious. I followed the advice of others and reduced the oil to 3/4 cup. A half cup would have sufficed. I did not add any nuts at all. I have to disagree with some users that the frosting "made" the cake...both my husband and my daughter preferred the cake unfrosted. Perhaps it was different because I used cream cheese. Thank you for sharing a simply wonderful recipie.

Vegan Black Bean Soup

Call the fire dept! Did you REALLY mean 2 TABLEspoons of chili powder???? If you use caution with the chili powder ( to your taste of course) This recipie has great potential.

Peanut Butter Cake II

Reviewed: May 1, 2003
This yeilded a perfect texture cake. However, I thought that I could taste the yellow butter flavor from the cake mix more than I would have liked. Next time I think I would use a white cake mix as a base. The frosting was much too sweet. I ended up adding 2tbsp. cocoa powder to tone down the sweetness, which helped, but next time I would use a different frosting all-together.

Magic Mango Bread

Reviewed: May 3, 2003
This was a delight! I only used a handful of rasins..probably half a cup, as I don't care for cooked rasins very much. I used fresh coconut, mmm..good, but difficult to achieve given the shape of cracked coconut and the shredder. I crunched up some almond slivers in place of the walnuts. I will make this one again! Thanks.

Gerry's Chicken Enchiladas

Reviewed: May 5, 2003
Very good Enchiladas. Because I left out the chili peppers ( I was too chicken ;) I would add some cayenne pepper next time. I marinated in buttermilk. As was another reviewer, I was a bit sensitive to the saltiness of the sauce; but I love the idea of another reviewer who used the sauce in place of the Enchilada sauce, Fabulous idea. When I removed the chicken for shredding the sauce reduced perfectly and in only as much time as it took to shred the chicken.

Banana Banana Bread

Reviewed: May 11, 2003
i used only 3 bananas-and was out of butter (gasp) so i used the old standby Crisco butter flavor shortening with good results. For those that do not like an overwhelming banana flavor, 3 bananas worked great.
