Kafta (BBQ)

Reviewed: Mar. 7, 2004
Yum Yum Yum!!!! Despite the instructions, i did cut back on the red pepper to about 1/8 tsp and increased the black pepper to about 1/2 tsp. This is realllly delicious. You'll never go back to plain burgers again! Since I wasn't grilling out, I just fried these on the stove-top, occassionally turning until firm.

Keema (Indian-Style Ground Meat)

Reviewed: Mar. 5, 2004
THANK YOU!!! This tastes just like a dish I tried from a Pakistani woman and had asked her for, but never received the recipe. The only thing its missing is a little ginger, which I will add next time.

Beer Butt Chicken

Reviewed: Mar. 5, 2004
I wasn't happy with this recipe...as it didn't lend itself to a beer substitutions. I however, didn't want to skew the ratings since i didn't follow the recipe exactly but wanted to offer my experience. I subbed Seirra Mist and added extra spices (cumin and curry) even with the addition of spices...the meat wasn't very flavorful but was quite moist due to the exorbent amount of butter. The only thing i can figure is ppl are drinking more than their share of the beer and writing happy reviews. ;) jk. kim

Pan Fried Green Beans

Reviewed: Mar. 4, 2004
I was inspired to try this because my mother makes a similar dish. The difference being the green beans are sauteed in freshly chopped onions and olive oil. The garlic was a nice addition. We prefer the flavor of the fresh onions but will now add garlic as well. Thanks for sharing.

Sam's Famous Carrot Cake

Reviewed: Mar. 4, 2004
I cut the recipe in half, left out the raisins, used gormet buttermilk. I was pleased with the texture but the taste was not "out of this world" like i was expecting after all reviews. I would make it again perhaps increasing the carrots for more flavor.

Banana Nut Oatmeal Bread

Reviewed: Mar. 4, 2004
I realllly wanted success with this recipe, to bring up its 3 star rating, thinking it must be good and others must be doing something wrong or expecting more of a sweet bread. Contrar mo frair! (boy was i wrong) This was an utter dissapointment and unedible waste of ingredients!

Macadamia-Crusted Sea Bass with Mango Cream Sauce

Reviewed: Mar. 4, 2004
I held out on making this for a long time, waiting to get some sea bass. When I checked for it at the grocer...i was astonished at the expense. I decided to make it tonight with tilapia. Taking a tip from "guy chef" i left out the mac nuts (didn't have any) and simply sprinkled seasoned bread crumbs atop the baked fish. To compensate for some of the spices..such as red pepper flakes, i simply added a sprinkling of red pepper to the mango sauce along with a splash of guava-pineapple nectar. This was a very tasty dish, the prep of the fish alone, even before the crust or sauce...suprisingly, could stand alone, its that good. Thank you.

These were edible, the prominent flavor being black pepper. Nothing I am eagerly awaiting to make again.

Award Winning Peaches and Cream Pie

Reviewed: Mar. 1, 2004
This was nice but i had the same mushy crust problem as some others. I used the instant pudding mix. A couple reviewers say to be sure and use NON instant. AH HA! I just double checked the recipe...which states NON INSTANT mix. HOWEVER, if you have purchased and are using the TNT allrecipes cookbook it lists INSTANT pudding mix in the ingredients. I will try again and see if this remedies the problem.

I subbed the wine with rice vinegar for a non-alcoholic dish. The flavor of the shrimp was exquisite. I used 3 cloves of minced garlic.

I tried a great tip i got from other reviewers...to soak the fish in milk prior to cooking...worked out great. Served with garlic and olive oil flavored couscous and was a real winner. Thanks to submitter and fellow reviewers.

Vietnamese-Style Chicken Curry Soup

Reviewed: Feb. 13, 2004
This is by far the best thing I've made all year!! Bill, yer the bomb! I didn't find any lime leaves, and I used 3 chicken breasts left over from a slow cooker chicken curry recipe. I didn't have any onions so I used about 1/8 c. of minced onion. I used the Madras curry.(which is nothing like Garam Marasala, an indian blend of spice) Thanks so much for sharing.

Tiramisu Layer Cake

Reviewed: Feb. 11, 2004
Do make the effort to find marscapone cheese, its so good! I didn't have any coffee liquor so i just subbed some of the brewed coffee where it was called for. I used a trick i remember my mom doing, instead of baking 3 layers, i baked one in a deep cake dish and cut the layer in half, it worked out well. Thnks!
