Glazed Almond Bundt Cake

Great cake. I subbed the vanilla extract for pure vanilla and subbed the almond extract with rose water. This resulted in an exceptional alcohol free cake.

Parmesan Garlic Bread

Thank you. I used fresh rosemary because its what I had, and I inadvertently added 1/2tsp of garlic powder. A very nice healthy alternative to jarred spreads and frozen preservative ladden breads.

Golden Saffron Rice

This is tasty but i would recommend soaking and rinsing the rice until water runs clear before cooking to prevent the rice from sticking together.

Moroccan Potato Bean Soup

This was very tasty, however too salty, perhaps my own fault as i used a chicken base soup starter for the boullion which i think was the culprit. I used great northern beans. I didn't have whole milk or 1/2 and 1/2, so i used 1% milk with a splash of whipping cream. I will make this again. Thank you William.

Chocolate Banana Bread Pudding

(UPDATE 2008: Had a new idea for Thanksgiving, to use 3/4 cup canned pumpking in place of the bananas for a holiday treat. WOW...SUPERB!) I stumbled upon this recipe looking for a way (besides banana bread) to use overripe bananas. Instead of adding sliced bananas...I put mine in to blend with the egg/milk mixture. I just may never make banana bread again. What a treat.

Chicken Wild Rice Soup I

This was my first time making a wild rice soup. I used only 1 c. wild rice (was all i had) i followed the instructions given on the package for the rice, which was 4 c. water per 1/2 cup of w.r. I also only used 1 c. half and half (fat free) and only 2/3 c. of flour, all with positive results. I didn't have any celery on hand so i subbed 1/4 tsp of the salt for celery salt and increased the carrots. Savored by all. Thank you Sue!

Cottage Cheese Chicken Enchiladas

This gets three stars for ease and edibility. However, the flavor is heavy yet lacking. If your looking for an outstanding enchilada you've got to try Gerry's chicken enchiladas. (this site) More work involved, but much much tastier!

This is good. I always nix the refried beans. I prepare and serve in a round casserole dish, this way the tortillas fit perfectly atop the ingredients.

Apple Banana Cupcakes

I have made this recipe 3 times...each time craving a banana apple combo. I was not really impressed any of the times. The last time i made it i did sub. 1 c of wheat flour for one of the all purp. flour cups. Also i topped it with cream cheese frosting which made it much better.
