Easiest Peanut Butter Fudge

Amazing fudge! Wonderfully light and a little fluffy, yet still rich. I use Smuckers Natural peanut butter, which lends a better PB taste than some of the other types. I've made this recipe 3 times now, and it always comes out perfect. I also use the modification recommended in the reviews: 1 cup PB, 2 cups brown sugar, and 3 cups powdered sugar. Also, start the 2 minute timing as soon as you see small bubbles, and I typically stir constantly while boiling. So easy, so FAST, and everyone loves it!!

Lentils and Rice with Fried Onions (Mujadarrah)

This is wonderful! It's become a regular dish in our household. My edits: use about 5 onions, because the caramelized onions really are the star of this dish. Don't be afraid to let them get reallllly dark brown. When I add the rice, I mix in 2 tsp cumin, 3 cloves garlic, and 1/2 tsp cinnamon. This is nice with sour cream on the side but it's better with Greek yogurt. The dish has a completely different flavor with and without the Greek yogurt! For extra flavor, cook the lentils and rice in reduced sodium chicken stock instead of water. Thanks for a great recipe!

Tiny Chicken Turnovers

These are delicious! I could eat the filling straight (but I try not to). The first time I made these, I created the dough myself. It was a lot of work and the dough wasn't that fantastic, plus a little hard. Every time since that, I use store-bought refrigerated croissant dough, which works fine! I'll cut the triangles in half, then use a rolling pin to make a rough circle or rectangle. Put in the filling, close them up, and sprinkle a little paprika on the top and you're done! I've also had no ramifications from skipping the "vent step". Creating the vents actually allows them to dry out a little in the oven. These do work well after freezing, but are best fresh! Thanks for an amazing recipe!

Strawberry and Feta Salad

So delicious! I love the way the sharp feta and the strawberries go together. This was a huge hit at a family party. The dressing is amazing, after I've run out of strawberries I'll just mix a little dressing in with a spinach mix and it's a delicious lunch. My edits: I only use 1/4 cup oil and 1 T brown sugar, and it works just fine. I also double the garlic. Whisk the dressing right before serving, because it LOVES to separate.

B.L.A.T. Wraps

These are a regular dinner for me and my family! Great way to get delicious vegetables. I do double the bacon, because I'm a little naughty, but I use light ranch sauce, which probably makes no difference since I double the bacon. So good, so quick!!!

Curried Coconut Chicken

A favorite! I make this one in our regular rotation. Here's my edits: I omit the tomato sauce and use a 30 oz can of diced tomatoes (with liquid). I add a pinch of crushed red pepper flakes when I add the tomatoes, for a light kick. I double the garlic, halve the sugar, and let it simmer uncovered to reduce. Throw a little rice in the rice cooker and you're done! So good, lots of rich flavor. Love this recipe! Thanks, ROMA!!!
