This is a great way to cook chicken and dumplings. It is very much like how I prepare chicken and dumplings when I don't cook them in the slow cooker, but better because the chicken is super tender and I can have the longest part of the cooking completed while I'm at church or doing something else. For the dumplings I would recommend using a large can of hungry jack buttermilk biscuits. The layers pull apart easily and can be pressed flat and cut into dumplings. I added 2 small cans of vegall (no salt added) after I removed the chicken and right before adding the dumplings. This is a great one pot meal and my family loved it.
