Homestyle Turkey, the Michigander Way

Reviewed: Nov. 27, 2010
Excellent! This was my very first attempt at a Thanksgiving turkey, and this recipe didn't disappoint! Followed ingredients to a T....basted a few times while cooking, and also used my injector to inject juices into the turkey while cooking as well. Thanks!

Pumpkin Chocolate Chip Muffins

Reviewed: Oct. 27, 2010
Pretty yummy! I upped the spices a little due to other reviews, and also made it a bit healthier with the applesauce/whole wheat flour tips suggested by many others. Used about 3/4 c. mini chocolate morsels, and will probably cut it back to the original 1/2 c. next time. Felt that it kind of overwhelmed the pumpkin in some of the muffins, but that's my own fault for adding more than the recipe called for. Since you're making muffins, make sure to use the paper liners (if you choose the liner route) so that you can heat in the microwave in the mornings, if you choose. Great fall recipe!

Toasted Pumpkin Seeds with Sugar and Spice

Reviewed: Oct. 24, 2010
I only ended up using about 4 tablespoons of sugar, but these are delicious! Oh, and I used one tablespoon butter and one tablespoon olive oil.

Texas Caviar with Avocado

Reviewed: Oct. 9, 2010
This is a really good base recipe. I omitted the avocado & jalapeno, and added a can of corn & about 1/3 cup fresh cilantro. Also, I used the packet of zesty Good Seasons and made my own italian dressing, after reading another review. Wonderful taste, but it can come out a little soupy. Be sure to drain your beans, and next time I think instead of just pouring the 8 oz. of dressing in, I'll add it slowly, stirring between pours to see how the amount of dressing I'm adding in is affecting the 'soupiness'. I'm guessing it probably only really needs maybe 4-5 oz. Other than that, GREAT recipe! I had some with tortilla chips, and later put a few spoonfuls into a whole wheat pita! Thanks for the recipe Kim! (P.S. I've never used that Good Seasons type of dressing before -- it's excellent! So much better than bottled Italian!)

Banana Banana Bread

Reviewed: Oct. 6, 2010
Awesome, awesome banana bread recipe! Stays moist for days (if you have a big family you may need to make a few loaves to find out, because between me and hubby it was gone in 2.5 days!) Like other reviewers, I added a tsp. of vanilla and a tsp. of cinnamon. Also, after greasing my pan, I sprinkled cinnamon sugar on the bottom and along the sides. Ended up cooking for 55 minutes, then covered loosely with foil and cooked another 15 minutes. Like someone else said, make sure your oven rack is situated one notch below the direct middle, so that the top of your bread will end up sitting right in the middle of your oven, very important! Lastly, instead of a toothpick, I usually like to test with wooden shishkabob skewer if I have them handy...reaches lower into the deep bread! :)

Catherine's Spicy Chicken Soup

Reviewed: Sep. 17, 2010
This is SO good! I only made 1/2, and for 2 people, could probably get away with 1/4 of the original recipe. It makes a TON...but it's okay with me because it's absolutely delicious and makes great leftovers. Next time I'll probably add another can of corn, because I liked the nice sweet contrast the corn bites had, but other than that, wouldn't change a thing. I served with Jiffy cornbread muffins, which went very nicely with the soup!

Best Brownies

Reviewed: Aug. 30, 2010
These are REALLY good brownies. Mine came out tasty and very moist...I actually made them 3 days ago and they're still not dry, and I'm not the best baker out there. I made these following the recipe exactly, (minus the frosting) and they're delicious!

Amish Breakfast Casserole

Reviewed: Aug. 30, 2010
This casserole is great! It's easy to make and I can't imagine it ever coming out inedible. I used 8 eggs, (rather than the 6 called for) which I felt was perfect. They blended in nicely with the potatoes, and there wasn't a lot of just random fluffs of egg. The only other suggestion I would make would to add in some salt, pepper and other spices you like. I added just a little onion powder, seasoned salt and a dash of cayenne, but would probably add a bit more next time. It was a little bland, but nothing that some salt and pepper couldn't fix. Great starter recipe -- both me and hubby liked it, and we'll definitely be making it again!

Ultimate Maple Snickerdoodles

Reviewed: Aug. 25, 2010
I added an extra egg before spooning onto the cookie sheet, because I felt it was too dry and crumbly. Overall, I really liked this, but would cut back on the sugar next time...I felt they were a bit too sweet. I'll definitely try this one again. I think it would go great with some vanilla ice cream!

Skillet Green Beans

Reviewed: Aug. 25, 2010
I didn't love this one. Maybe if I had used canned green beans it would have been better, but I felt like the beans didn't have enough flavor and the sour cream didn't stick well. I won't be making this again.
