Awesome, awesome banana bread recipe! Stays moist for days (if you have a big family you may need to make a few loaves to find out, because between me and hubby it was gone in 2.5 days!) Like other reviewers, I added a tsp. of vanilla and a tsp. of cinnamon. Also, after greasing my pan, I sprinkled cinnamon sugar on the bottom and along the sides. Ended up cooking for 55 minutes, then covered loosely with foil and cooked another 15 minutes. Like someone else said, make sure your oven rack is situated one notch below the direct middle, so that the top of your bread will end up sitting right in the middle of your oven, very important! Lastly, instead of a toothpick, I usually like to test with wooden shishkabob skewer if I have them handy...reaches lower into the deep bread! :)
