Vegetable Soup II

This is so versatile! I took advice from other reviewers and used the Hot and Spicy V8 juice. I also added garlic, potatoes, and used frozen veggies instead of canned. I didn't measure anything but the broths so my soup came out super chunky, even though I didn't use barley. I went a little crazy buying low sodium ingredients so I made up for it with seasonings like crushed red pepper. That mixed with the spiciness of the V8 will make this even better for cold weather meals.

Refried Beans Without the Refry

These were just what I was looking for! I have a little 2qt crock pot so I changed the serving size to 5 and went with the updated measurements. The only thing I added different was chicken broth in place of half of the water, a little cayenne pepper and a squirt of lime juice. I just put the cooker on high and let them go for about 9 hours. I omitted salt completely until after I blended the beans, and then only added a pinch or two. I like my beans smooth so I put all of the beans along with some of the reserved liquid into my Bullet Blender and blended away until they were perfect. These were great on the Chalupas I made tonight! I love that it's so easy and healthy!

Taco Seasoning I

This was a great seasoning! I substituted 1/8 tsp of cayenne for the red pepper flake, added a 1/2 tsp of flour to the seasoning before sprinkling it onto the meat, then stirred 2/3 cup of water in with the seasoned meat and let it simmer down. It had just the right amount of kick!

Creamy Au Gratin Potatoes

We made these tonight to go with our steaks and thought they were absolutely delicious. Like many other reviewers, we diced up our onion and sauteed it in a pan before layering it in with the potatoes. We also used 2 cups of cheddar and added in onion and garlic powder. With about 20 minutes remaining we removed the foil and turned on the broiler to get a crispy layer on top. These tasted great with green onions on top! Mmmm. Our only complaint is that with all that cheese, there is quite a bit of oil in it. Not the healthiest meal, but very very good. I'm sure it will taste even better when reheated in the oven later this week!
