Penne with Chicken and Asparagus
Made this for a dinner party for 4, and there were almost no leftovers. Everyone was thrilled as to how healthy it was. I used whole wheat penne and added the mushrooms and sun-dried tomatoes as suggested by others. Red pepper flakes added a nice subtle kick. I will be making this again with what I have available - whole wheat rotelle and broccoli rabe. A definite one for the rotation.

Awesome Sausage, Apple and Cranberry Stuffing
WOW, I've never been a stuffing person - till now. Last night was my first full Thanksgiving dinner where my family and my fiance's met for the first time at our home. A really big deal so trying this new recipe along with other new dishes was risky. I used the JD Sage Sausage (and used a bit less sage in case of overload), bagged toasted bread cubes and cornbread stuffing as suggested by others, the liver that came with my turkey, and a carton of chicken stock since I was not stuffing my bird. Covered for 45 mins at 350 then uncovered for 15. Was still very watery and had no form so I put it back in multiple times till I reached the desired consistency. Everyone remarked about how good this tasted. I only wish I made more. After leftovers were divided up, I had only a serving left for myself.

Smothered Filet Mignon
I made this for dinner last night. After a few bites, my boyfriend muted the TV and said to me, "Baby, this is outstanding. It's so tender. It tastes just like the ones in the restaurant. How did you do that?" After eating his, he finished mine. I used 1-inch filets and left them out to marinate. I pierced each sides with a fork a few times to help the flavors soak in. I then broiled them 3-4 inches from the heat source, 7 minutes per side. I put the topping on during the last 2 minutes. Served them sliced over a romaine salad with sliced red onions, pine nuts, croutons, and blue cheese with balsamic dressing. Also added the grilled shrimp scampi from this site. Mmmm.
