Zucchini Brownies

They were moist, chocolatey and just more than I anticipated for a recipe without eggs. Think I'm making it again for the office and adding more zucchini to wig them out on the healthy brownies. We have a BUNCH of picky eaters and they'll NEVER know. Thanks for sharing!!

Chocolate Zucchini Bread I

Flavor was great, no one knew it had zucchini in it! I substituted 1/2 c of cocoa for the squares; and added another cup of zucchini, it worked. To help it rise more, I added 1 tsp of baking powder and some vital gluten...raised better for the 2nd batch. I also greased the pans with butter and sugared the bottom of the pans. NOTHING stuck. Will DEFINATELY make again. Even my picky grandchildren ate it without question 2 thumbs up!

Soft Zucchini Spice Cookies

These ARE VERY LIGHT, and they are flavorful. Just don't end up with a final product that temps your taste buds for more. It's a simple cookie with good flavor. I ended up baking them for more than the 10 minutes, but it could just be my oven. They need something to either make them a little heavier or something that will add another flavor level. Not sure that I'll make them again; however, I appreciate having another way to use up the zucchini from the garden.

Pineapple Zucchini Bread

It had tremendous flavor, but the bread seemed to be a little too moist. I'm going to have to drain the zucchini before adding it to the 2nd batch. The flavor was all I was expecting and it does tempt you to come back for more. I may try putting a crumb topping on this one to see if it add another level of flavor and reduces some of the moisture. Good recipe!

Cheeseburger Soup I

I had no problem getting the consistency where it needed to be. You have to remember to let the b├ęchamel (butter, flour & milk) thicken before adding it in to the first mixture. Added about two teaspoons of Worcestershire sauce. Didn't measure the cheese by cups. I added 1 1/2 lbs sharp cheddar and about a 2 inch slice off a regular log of Velveeta. Minimized chopping time and bought matchstick carrots and threw the onions and celery in the food processor. Buying southern style hash browns does work very well, I appreciated that suggestion from another reviewer. This recipe doesn't work well with low sodium chicken broth. It needs the salt to bring everything together at the finish line. I added about 2 teaspoons of salt at the end along with extra basil and parsley. It's a very good creamy soup. My husband, who doesn't like hamburger likes it.

Cheesy Ham and Hash Brown Casserole

All of my children, husband and grandchildren liked this. It's a take on scalloped potatoes and ham, but a much easier version with the shredded potatoes I used. I didn't change a thing and I'm still amazed it doesn't need any additional ingredients...like salt and pepper. You won't go wrong if you put this in your recipe box. Christmas brunch was a success with this as one of the main stays. My picky eaters even liked it.

Cheesy Ranch Potato Bake

I used the suggestion of one of the previous reviewers and baked a 5 lb bag of potatoes for an hour and then let them cool. I then cut taters up into about 1/4: pieces and then mixed up with the spices before putting into the crock-pot with the cubed butter. In the morning, I turned on the pot to Med...as I didn't get up early enough. It was done in 2.5 hrs and ready for me to add the cheese and ranch dressing. ALL TURNED OUT PERFECT. My oldest has always been the one to make these for family functions. With working so much at the holidays, I got to take a spin. Everyone LOVED them. I also added some of Emeril's essence and all came together just great. I'll have to remember to use it for the next potluck dinner we have to go to. Doesn't take much effort to make...and that's a HUGE bonus.

Cranberry Orange Bread

I have to share that I made this up, albeit extremely tired for Christmas morning brunch. I forgot to add the butter, but the finished results still came out PERFECT. My granddaughters that live nearby love fruit and veggies, so this works out great for them, especially being able to see the orange segments, and the craisens work out well too. I use a larger can of mandarin oranges and let them drain for about an hour before working on the recipe, and even generic dried cranberries work. You will NOT be disappointed in this recipe at all. I did use half white sugar and half brown. Seems to add another level of richness to the bread. Good luck and ENJOY this.
