Cranberry Orange Bread
I have to share that I made this up, albeit extremely tired for Christmas morning brunch. I forgot to add the butter, but the finished results still came out PERFECT. My granddaughters that live nearby love fruit and veggies, so this works out great for them, especially being able to see the orange segments, and the craisens work out well too. I use a larger can of mandarin oranges and let them drain for about an hour before working on the recipe, and even generic dried cranberries work. You will NOT be disappointed in this recipe at all. I did use half white sugar and half brown. Seems to add another level of richness to the bread. Good luck and ENJOY this.

Cheesy Ranch Potato Bake
I used the suggestion of one of the previous reviewers and baked a 5 lb bag of potatoes for an hour and then let them cool. I then cut taters up into about 1/4: pieces and then mixed up with the spices before putting into the crock-pot with the cubed butter. In the morning, I turned on the pot to Med...as I didn't get up early enough. It was done in 2.5 hrs and ready for me to add the cheese and ranch dressing. ALL TURNED OUT PERFECT. My oldest has always been the one to make these for family functions. With working so much at the holidays, I got to take a spin. Everyone LOVED them. I also added some of Emeril's essence and all came together just great. I'll have to remember to use it for the next potluck dinner we have to go to. Doesn't take much effort to make...and that's a HUGE bonus.

Cheesy Ham and Hash Brown Casserole
All of my children, husband and grandchildren liked this. It's a take on scalloped potatoes and ham, but a much easier version with the shredded potatoes I used. I didn't change a thing and I'm still amazed it doesn't need any additional ingredients...like salt and pepper. You won't go wrong if you put this in your recipe box. Christmas brunch was a success with this as one of the main stays. My picky eaters even liked it.
