Spinach Enchiladas

Very tasty! Good base to go from. I used flour tortillas my own personal preference, and added a bell pepper into the spinach mixture like others had mentioned. Then used a rotisserie chicken and shredded it for those I did not keep vegetarian. Oh and mixed 2 diffferent kinds of cheeses not just monterey jack but a taco mix with seasoning that Kraft has...and added some spices to the mixture before rolling chili powder and cumin, and the same spices to the top of the enchiladas after putting on the cheese... I ended up baking it covered for 20 then uncovered for 15 to make sure bc of the chicken it was warmed through. And I put down a layer of enchilada sauce mixed with salsa verde before putting down the rolled enchiladas. Just thought I'd share those details in case but it is a good base recipe :)

Mexican Bean Salad

Very tasty! I should have done a better job at draining everything I had a lot of excess liquid it seemed. I used canned corn as that is what I had on hand and it worked out fine.

Mama's Asian Chicken and Rice

Tasty recipe, definitely double the sauce. I followed another review and used ginger, did not have five-spice...and I added veggies. Yummy served over rice. I'm also a wimp spice wise so when I doubled the sauce I did not double the red pepper and it was perfect to me. I will definitely make it again!

Peanut Butter Cup Cookies

Very tasty and yummy especially if you love peanut butter. Hard to really tell if they were done after 8 minutes but I trusted other reviews and it was the right thing to do. I'd definitely make these again!

Mini Pumpkin Whoopie Pies

Great recipe, very tasty! I added some pumpkin pie spice also to the batter. For the filling I ended up using 8oz of cream cheese, 1/2cup butter and added cinnamon to it. The cookies were slightly different shapes (I did heaping teaspoons) but easy enough to match up. My only issue is that they were sticky after cooling so I used powdered sugar on the outside as otherwise I'd have taken a fingerprint out of each one when I filled them. I would definitely make these again, they were a hit!

Too Much Chocolate Cake

Easy to make great cake! Made it for my husband's birthday as he is a chocolate lover. I am not... I expected it to be much more rich, although I ate a really small piece. He loved it so that is all that matters :) I followed the recipe to a T except used chocolate fudge pudding. I served strawberries and whipped cream on the side and that was a good balance. I think next time I will try this as a layered cake with a fruit or icing layer in between. I would definitely make this again and would recommend it!

Pesto Polenta Lasagna

Great base recipe! I agree with others, bake/crisp the polenta before putting this together. I did it dairy free and it is still tasty. I added spinach, mushrooms and roasted bell peppers...good recipe to play around with. Great for those eating gluten free!
