Oven-Roasted Asparagus

I did not put the cheese on during the roasting and it was much better during the last 2 or 3 minutes. Maybe my bunch of asparagus was small; I had a pound, but it was very oily and salty but still took 25 minutes to roast to tender crisp. The flavor was good, just needs some adjusting.

Roasted Garlic Lemon Broccoli

Tri-Colored Pasta with Feta Cheese

Extremely dry and bland, there was not near enough seasonings for the amount of pasta. I used some bottled Greek dressing and the next time it was great.

Garlic Vegetable Soup

After making it as directed, I thought there was FAR too much liquid for the amount of veggies. I doubled the carrots, celery, and cabbage, but used a couple fresh tomatoes, because I had no more canned. The pepper still overpowered everything. It calls for no salt, so at the end I added 1 t and it was still very bland. I can't even see that this is a starter recipe.

Angel Hair Pasta with Garlic Shrimp and Broccoli

Overall this was a good recipe, but it just needed some adjustments. alfredo sauce is not cheesy enough. I used steamed brussel sprouts instead and had to double the amount of sauce for the pasta. But everything else is fine. I didn't have pesto, but there was no real need for it, and I found it was just fine without it.

Chocolate Covered Strawberries

This is a very good recipe, but I have worked with chocolate for many years and the amount of chocolate listed here is too much for the amount of shortening. The darker the chocolate, the more shortening or paraffin is needed to make and keep it smooth. The strawberries must be clean, dry, and room temperature before starting.

Caramelized Brussels Sprouts with Pistachios

The reason I only gave it 4 stars is because the 4 pounds of Brussel sprouts compared to butter and onions, seemed sooo outlandish, I didn't want to chance it. But, I scaled it down to 1/2 pound size for 2 people and it was excellent flavor.

Beef Barley Vegetable Soup

I changed and added to this recipe so much that it is not the same. Still I gave it just 2 stars because the proportions are all wrong for me. I needed about 10 cups of water for the amount of meat and vegetables, which I didn't change. I used 1 full cup of barley and no tomatoes, which was my preference. Since I cooked in on stove top, I can't attest to the amount of cooking time, but even then I simmered the beef for over 3 hours until it was tender. If I had added frozen vegetables, I'm sure I would have had a stew instead of soup, even with the amount of extra broth I added.

This was really good and very easy. The reason for only 4 stars is the cooking time was way off. I took it off the heat at 6 minutes and it was already starting to turn from the bright green.

Ultimate Macaroni and Cheese

This was a great creamy plain old fashioned macaroni and cheese. The first time I made it I used whipping cream and sour cream in place of all the milk. Wow... creamy, comforting and fattening. I did not use garlic powder because even though I love it, it did not sound good in mac and cheese. I had no ground mustard so I left that out, and the amount of pepper sounded way off base so I only used 1/4-1/2 t until it tasted good to me. I also used crushed corn flakes instead of bread crumbs to the top of the casserole and drizzled the whole thing with another 1/2 cup of melted butter. I baked it about 45-50 minutes, because it was not hot and bubbly in the center at 30 minutes. Definitely use a larger pan if you have one. This went right to the top of my largest oblong glass dish.

Pumpkin Bread II

This was the blandest pumpkin bread I have ever tried. I added cinnamon and raisins and nuts to the second batch and it didn't make a difference. The reason I tried it again was because of the butter and thought it might be different, but it was heavy and thick and flavorless.
