Shrimp and Quinoa

The quinoa with all the veggies and sweet lime flavoring is excellent. I used red peppers instead of green for extra color, and regular raisins because I didn't have the golden. The only thing I didn't like was the shrimp had no flavor. I would grill it separately speared on rosemary kebobs and your favorite seasonings.

Coconut Macaroons III

I made this & meringue cookies for my hubby's birthday. I normally don't like coconut macaroons, but these were pretty good. My package of coconut flakes only came with 4 1/2 cups, so I added 1 cup mini semisweet chocolate chips. I think that actually helped keep it from being too sweet. After the first batch, I decided not to use my hands (hate the sticky mess). I used two spoons to make loose balls. I dipped my fingers in cold water (to keep them from sticking) & lightly patted the balls. My husband loved the cookies, and I have to admit they're a little dangerous for me, too!

Beth's Spicy Oatmeal Raisin Cookies

I normally don't like to eat the cookies I bake. These were addictive! I ate 6 in one sitting! For the holidays, I used Cranraisins instead of raisins. Yum!

Bella's Mac and Cheese

This tasted much better than the store bought brand. However, it's only good right after you cook it. After it's cooled down, it doesn't taste great, and it gets oily after reheating.

Mixture for Meatballs, Meatloaf or Burgers

This is great with homemade spaghetti sauce! We used the leftovers for mini meatball sandwiches (put them on fresh baked dinner rolls and add parmesan cheese). Yum!

Ham and Fresh Basil Pinwheels

This is a great recipe to whip up the night before. I used roast beef and turkey. It's also great with regular tomatoes or roasted red peppers. The basil makes it delicious! This is a great summertime lunch!

Apple Dip

Everyone loved this, young and old! I asked my husband how he liked it, and he said he didn't know, he'd have to try it a few more times. He tried until it was half gone. I had to make another dip for the guests.

Never Fail Pie Crust I

White Chocolate Macadamia Nut Cookies III

I baked two batches of these and sent them to work with my husband. He said he took some for himself when he dropped them off in the company kitchen. When he returned half an hour later, they were all gone. Must have been good!

Cranberry Pecan Pie

I normally don't like pecan pie because it's too sweet, but I made it because my husband likes it and the cranberries make it festive. The cranberries also add a tiny bit of tartness to the pie which was nice. It also added a little bit of color peaking out from between the pecans. Very pretty!

Roasted Vegetables

My mouth was watering when it was roasting in the oven. I omitted some vegetables and added others. This recipe can be used with any seasonal vegetables. The dressing makes the dish. Delicious! Thanks!

Apple Crumble Pie

This was soooo good! My mother-in-law usually makes this type of pie on Thanksgiving. It's my husband's favorite. She'll be out of town this year, so I looked up this recipe. This was my first time making pie. I didn't know what kind of apples to buy, so I used 2 small Gala apples, and a large Granny Smith. I used 1/3 sugar with the apples instead of 1/2. I have to say, this was the best apple pie I've ever had! My husband, a VERY PICKY (If I could underline and boldface those two words, I would) eater, loved it! I asked him if he thought it needed any changes before I noticed that he'd already eaten half the pie! He said it was better than his mothers! :o)
