Garlic Butter Sauce I

very good/quick base (instead of 2 dollar pkg from store). Saute onion, garlic, mushroom?, spices + grnd pepper, butter, evoo, chicken stock/wh wine, milk3/4c & corn starch to thicken, plus whatever cheese laying around. Bingo on pasta or+veggie or+chk breast...oops went wild again ;)

Veggie Tuna Salad

Great basic recipe for a tuna/veggie mix, which I serve IN pita halves... going for a different flavor I dice standard pimento olives, fresh garlic, tomato strips (drained well), green leaf lettuce, smoked paprika, season salt, fresh pepper, radish & onions (julienne/thin strips)... split the lite mayo with fat free sour cream and I have yet to use 'steak seasoning' (?), but I often add Sriracha for guys watching football games ... but hey, this is a "make to taste" sandwich... play with it and please yourself! I slap extra sharp shredded cheese (you pick one) and sour cream on top to serve... Oh, 1/2 cup mustard make a different deal a together and in my mind negates the tuna. This cannot be "juicy" or it will melt the pita halves. ENJOY!!

Easy & quick. Variations abound. Increase health factor with small amount of baked cauliflower & a sweet potato completely blended in. Great to chase the Winter chills.

Absolutely Ultimate Potato Soup

Excellent basic recipe, which you can easily adjust for quantity, taste and calorie count. Homemade chicken stock will provide a different, possibly more concentrated flavor. I nixed the cilantro and added more fresh garlic, plus a few more personal choices (fat free evaporated milk, fresh cracked pepper, etc.) and served with warm whole wheat bread, garlic butter with shredded cheese (sharp cheddar)& minced green onion available. Tweak away... they will gobble it up! Oh, I dropped a star for overall prep time and IMO avoidable calorie/bad fat count.

Easy Pizza Sauce I

Great easy recipe! If creative try 1/2c red Italian or Zinfindel wine, 1/2c water and 1/4c EVO. Puree onion, garlic, gr. pepper, plus spices as indicated and saute in butter. Add remainder & simmer...not as easy, but interesting. For a more Mediterranian taste, add 1 tsp smoked oyster liquid. For me, the smoked oysters and fresh tomatoes go on 1/2 the pizza...finish wine with pizza :)

Easy French Toast

Way too much milk & cinnamon, to egg ratio. Soaking time of bread depends on the type of bread selected. I find the use of home made or whole grain bread produces a delicious result and it takes longer to absorb a reasonable coating.
