Rick's Special Buttercream Frosting

I've made (and eaten) more than my fair share of buttercream frostings and I must say this is my all time favorite. I usually lean towards cream cheese frosting because I'm not crazy about buttercream, but this is my new go-to recipe. LOVE it. I did replace the shortening with butter though, so I would definitely recommend doing so...the flavor was amazing and the frosting holds its shape really well. 5+ stars from me :)

Oatmeal Waffles

These were phenomenal and so easy to make!! The oatmeal gives the waffles a nice texture and you get just a small hint of the cinnamon and brown sugar. Loved!!

Rich Chocolate Frosting

While the frosting was very tastey, I think "rich" is not the right word to use to describe it. When I think rich I think of a fudge like frosting. This tasted a lot like straight cocoa powder and was more fluffy than rich. Still good, just not at all what I was expecting.

Great taste and SO easy to make. You definitely have to follow directions though. A tip for those worried about dry cake: combine 2 cups of water and 1 cup sugar. Bring to a boil for 3 minutes and then let cool. Pierce your cooled cake layers with a fork and then use a spray bottle to distribute the sugar mixture. *Note: DO NOT spray the layers too much or they will become soggy! Just a few spritzes...you will have a lot of the sugar mixture left over. This is a great way to add moisture to a dry cake without starting all over

Double Layer Pumpkin Cheesecake

Made this for thanksgiving today and got RAVE reviews! Everyone said it's the best cheesecake they've ever tasted :) My only gripe: the recipe needs to be doubled because this comes out really thin and more like a pie. As a result I cut them into bite sized pieces so it would look better

Marshmallow Fondant

While this fondant tasted absolutely amazing it was very frustrating to work with. It's unbelievably sticky and takes forever to clean up. I also think I had a harder time because I was trying to cover such a large cake (3 layers). Next time I'll try using the marshmallow fluff as was suggested.

Banana Sour Cream Bread

Best banana bread ever!! The cinnamon flavor is prominent, while the banana flavor is more discreet. It has a fluffy almost cake like consistency, which i loved. Definitely a hit and something which will be a regular in my recipe rotation. Thanks :)

Almond-Raspberry Meringue Bars

These are the simplest appetizers i've ever made, and they are also the appetizers i've received the most compliments on. They are delicious and so easy to make! you better make a lot though, because once you put them out they go fast!

Bacon Mushroom Chicken

What a great recipe! Very easy and tasty! The only thing I did differently was broil the chicken right at the end to really give the bacon a nice crisp. Yum!
