Roasted Vegetables

Very, very good! Rick and I made these as described except using dry thyme and lowering the temp to 450. Next time I might not bother with white potatoes of any sort as the Yukons lent the least flavor to the dish. Also would make smaller cubes of the veggies to quicken the cooking time.

Easy and Elegant Pork Tenderloin

We loved this! Used a 1.5 lb tenderloin and marinated it in some olive oil, garlic, salt, pepper, and thyme for about 30 minutes. I then rolled it in Garlic and Herb Bread Crumbs until completely coated. Placed in a shallow roaster on non-stick foil and roasted at 400 for 20 minutes tented with foil and 10 more without.

Slow Cooker Thanksgiving Turkey

The turkey breast was very moist and flavorful! Cooked a 7lb bone-in breast for 5.5 hours (the first 2 hours on HIGH, the rest on LOW). I was worried about salty gravy because of the bacon so I didn't add jar of gravy as suggested. I did add about a cup of chicken stock and it was STILL super salty. I had to add almost 2 more cups of water to the drippings in order to make a decent gravy.

Easy Garlic Chicken

We really liked this...didn't need as much bread crumbs as the recipe calls for...Not great for leftovers because the topping became soggy, but that came as no surprise.

Easy Swedish Apple Pie

VERY GOOD! Big hit at Thanksgiving this year! I followed the advice of some of the reviewers and changed 2 of the instructions/ingredients as follow: for the filling I mixed 1T of brown sugar, 1t cinnamon and a bit of fresh nutmeg together with the 1T granulated sugar and then tossed it all with the apples. For the crust, I used softened instead of melted butter and I substitued one-half cup light brown sugar for one-half cup of the the granulated sugar. Baking time was about perfect at 45 min.

New Orleans Barbeque Shrimp

We ALL loved this! I upped some of the spices a bit because I prepared 1.5 pounds of shrimp instead of just 1 pound. Kept the fats at a total of 1/2 Cup but used 1/4 Cup each of butter and olive oil. Also, I didn't have beer so I used chicken stock instead. Served over jasmine rice.

Pesto Chicken

Made this 6-30-12 and we really enjoyed it! I followed the directions exactly except used one rounded tablespoon of pesto rather than 2T on each piece of chicken. No need to change anything.

Oatmeal Chip Cookies

Really good oatmeal cookies! NOTES: I used one stick of butter and one stick of margarine. I had about 3/4 cup of butterscotch chips to use so I added those along with another 3/4 cup of semi-sweet chocolate chips. Also, baking time was more like 15 minutes than the 11-12 stated in the recipe.

Candied Carrots

Only Jack and I have tried these but we both really liked them. Only change I made was to the method which was to re-add the carrots to the pan after the sauce had been made instead of doing it all at the same time.

Easy Marinated Pork Tenderloin

UPDATE: Made this with only one tenderloin this time. Halved the marinade recipe, changing the Dijon to honey mustard...a positive change! Roasted for 25 min at 425 degrees. Perfect. ________________________________________ Everyone loved this! Since I used two tenderloins, it may be that 45 min was a bit too much cooking time...Next time I will check at 35 min. Also, may not need Dijon mustard at all...will try with only honey mustard next time.

Black Bean Chili

Very good chili recipe. I followed the directions almost exactly except that I used baby portabello mushrooms (a good idea), and yellow pepper (no jalepeno). Did not puree. Served over brown rice.

Blueberry Breakfast Sauce

Baked Garlic Parmesan Chicken

Delicious! Used tenderloins (18 of various sizes) so needed to double the amount of olive oil and garlic "wash". Breading mixture could easily be reduced by 1/4 and still be enough for this amount. Cooking time of 30 minutes was still good. UPDATE AS OF 20 NOV 2011: Made this the second time...everyone still loved it. This time I used breasts (four) and the original amount of "wash" was sufficient. WAY too much crumb mixture...should have halved it. Thirty minutes was enough but just barely because these babies were large!

Ham and Broccoli Bake

We had this New Year's Day 2013 and everyone enjoyed it. The changes I made were to use fresh broccoli and one and one-half jars of alfredo sauce. UPDATE: Sautéed a small shallot with the ham.

Chef John's Banana Bread

We really enjoyed this bread! It was easy to make but came out very moist and flavorful. The only diversion made from the original recipe was that I used 3 mini-loaf pans instead of one large loaf pan. I baked the minis for approx. 35 min. at 325.

Slow Cooker Lemon Garlic Chicken II

Good! Used 6 breasts cut in half. I didn't sear beforehand. Used Lemon-Herb seasoning instead of Oregano, salt and pepper. Dissolved one chicken buillion cube in 2 cups of water along with the butter. Cooked on low for 4 hours. Made plenty of liquids.
