Slow Cooker Thanksgiving Turkey

The turkey breast was very moist and flavorful! Cooked a 7lb bone-in breast for 5.5 hours (the first 2 hours on HIGH, the rest on LOW). I was worried about salty gravy because of the bacon so I didn't add jar of gravy as suggested. I did add about a cup of chicken stock and it was STILL super salty. I had to add almost 2 more cups of water to the drippings in order to make a decent gravy.

Amazing Pork Tenderloin in the Slow Cooker

I made this using about 2 pounds of pork loin...didn't change anything else. Results were good. Jack and I liked it. Alex was OK with it. Jenny actually liked it...very strange.

Pesto Chicken

Made this 6-30-12 and we really enjoyed it! I followed the directions exactly except used one rounded tablespoon of pesto rather than 2T on each piece of chicken. No need to change anything.

Chile Garlic BBQ Salmon

Really 4.5 stars...Halved the recipe because we had only 1.5 lbs of salmon. Also used lemon because I didn't have a lime. Next time, I plan to have a lime on hand to see what the difference is...Baked this in the oven at 450 (foil wrapped) for 15 minutes. Opened the foil for another 5 minutes.

Black Bean Chili

Very good chili recipe. I followed the directions almost exactly except that I used baby portabello mushrooms (a good idea), and yellow pepper (no jalepeno). Did not puree. Served over brown rice.

Slow Cooker Ham

Used this for Easter 2012 when our oven wasn't working...All in all it was a success. There was a lot of flavor provided by the sugar and the cloves I studded in the 6-lb bone-in ham I used. Cooked for 6 hours on LOW.

Asparagus, Chicken, and Pecan Pasta

This was good, not wonderful. NOTE: I halved this recipe and it still made enough for Jack, Jenny, and I for one night and then for Jack and I for leftovers. I already had frozen, grilled chicken tenders so I sliced them up instead of buying grilled chicken strips...although they may have had more flavor.

Easy Swedish Apple Pie

VERY GOOD! Big hit at Thanksgiving this year! I followed the advice of some of the reviewers and changed 2 of the instructions/ingredients as follow: for the filling I mixed 1T of brown sugar, 1t cinnamon and a bit of fresh nutmeg together with the 1T granulated sugar and then tossed it all with the apples. For the crust, I used softened instead of melted butter and I substitued one-half cup light brown sugar for one-half cup of the the granulated sugar. Baking time was about perfect at 45 min.

Easy Fruit Cobbler

Very good! I used a 12oz. pkg of frozen blueberries. Increased the baking time by 5-10 minutes. Increased the oven temp to 350 for the first 30 minutes. Used my 8x8 inch Pyrex dish. Also, I sprinkled cinnamon sugar over everything before baking.

Cottage Pudding (Cake for Strawberry Shortcake)

I made this for the first time over Labor Day weekend 2011. The shortcake is very good...just what you would expect taste and consistency-wise. I used my 9x9 inch metal pan and the baking time was 30 minutes (checked after 25 min as in directions). I did not turn the cake out onto another plate...just left it in the pan.

New Orleans Barbeque Shrimp

We ALL loved this! I upped some of the spices a bit because I prepared 1.5 pounds of shrimp instead of just 1 pound. Kept the fats at a total of 1/2 Cup but used 1/4 Cup each of butter and olive oil. Also, I didn't have beer so I used chicken stock instead. Served over jasmine rice.

Modenese Pork Chops

UPDATE TO ORIGINAL RATING: I used center cut bone-in chops and this was MUCH better the second time around. Also used butter instead of olive oil. ORIGINAL RATING: This has real potential just as written...My mistake might have been in using boneless pork LOIN chops. I almost always find this to be a tough cut of meat and these were no exception. Next time I'll use bone-in chops instead. The sauce was really good. I think this would also be good with chicken. NOTE: I subbed 2T of olive oil for 2T of the butter.
