Easy Fruit Cobbler

Very good! I used a 12oz. pkg of frozen blueberries. Increased the baking time by 5-10 minutes. Increased the oven temp to 350 for the first 30 minutes. Used my 8x8 inch Pyrex dish. Also, I sprinkled cinnamon sugar over everything before baking.

Cottage Pudding (Cake for Strawberry Shortcake)

I made this for the first time over Labor Day weekend 2011. The shortcake is very good...just what you would expect taste and consistency-wise. I used my 9x9 inch metal pan and the baking time was 30 minutes (checked after 25 min as in directions). I did not turn the cake out onto another plate...just left it in the pan.

New Orleans Barbeque Shrimp

We ALL loved this! I upped some of the spices a bit because I prepared 1.5 pounds of shrimp instead of just 1 pound. Kept the fats at a total of 1/2 Cup but used 1/4 Cup each of butter and olive oil. Also, I didn't have beer so I used chicken stock instead. Served over jasmine rice.

Modenese Pork Chops

UPDATE TO ORIGINAL RATING: I used center cut bone-in chops and this was MUCH better the second time around. Also used butter instead of olive oil. ORIGINAL RATING: This has real potential just as written...My mistake might have been in using boneless pork LOIN chops. I almost always find this to be a tough cut of meat and these were no exception. Next time I'll use bone-in chops instead. The sauce was really good. I think this would also be good with chicken. NOTE: I subbed 2T of olive oil for 2T of the butter.

Cousin David's Slow Cooker Brisket

Slow Cooker London Broil

Used "London Broil". The meat turned out tender, even shredded with 2 forks. I should have added 1/4 cup or more of water from the beginning as the gravy was a bit overbearing. Alex didn't care for this very much. Jack was OK about it. Jenny and I liked it.

Baked Garlic Parmesan Chicken

Delicious! Used tenderloins (18 of various sizes) so needed to double the amount of olive oil and garlic "wash". Breading mixture could easily be reduced by 1/4 and still be enough for this amount. Cooking time of 30 minutes was still good. UPDATE AS OF 20 NOV 2011: Made this the second time...everyone still loved it. This time I used breasts (four) and the original amount of "wash" was sufficient. WAY too much crumb mixture...should have halved it. Thirty minutes was enough but just barely because these babies were large!

Actually Delicious Turkey Burgers

Alex and I enjoyed these. Jenny (who doesn't care for turkey burgers), ate hers but that's about it. Jack was in PA so didn't sample. Probably would add more salt next time and cook on the grill for a shorter period.
