Lamb Chops with Balsamic Reduction

I made this for New Year's Day dinner and it was superb! I used fresh rosemary in place of the dried herbs, plus a little fresh garlic. I had some very good currant balsamic vinegar on hand so used that. The reduction was glossy black and we savored every bite! My lamb chops were 2 inches thick so I cooked them a minute longer, we like ours rare. I highly recommend this recipe and will use it again!

Libby's® Famous Pumpkin Pie

This is the very best pumpkin pie recipe ever! I grew up eating my mom's pies with this recipe, and I've made it countless times myself. A little real whipped cream is all the embellishment it needs. I have successfully made it substituting fresh milk for the evaporated with no problems, too.

Black Magic Cake

I'd give this ten stars if I could! Absolutely perfect, baked it 30 minutes, came out of the pans easily and frosted it with storebought chocolate frosting. I brought it to a party and there were only crumbs left! Everyone raved about it. Will be making this again!

Savory Vegetable Beef Stew

I thickened this stew with cornstarch instead of flour, for a gluten-free meal. And added a little red wine while simmering. Great hit for our dinner party! I served this with the Vegan Mexican Stew for our vegan guests. Both were a big hit. Salad and french bread completed the meal.

Vegan Mexican Stew

This was a big hit! I substituted one 15 oz can of pinto beans and one of black beans for the hominy (didn't have it) and thickened it with about 4 Tablespoons of cornstarch mixed in cold water, at the end. It made the broth a nice, stew consistancy. I will add corn next time I make it. Everyone loved it! Some added more chili powder or hot sauce to make it hotter.

Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill

I followed the recipe as written except for the cedar plank, but grilled it until the fish was just done. We all thought it was absolutely delisious! And once I find where my cedar plank is hiding, I'll try it on that!

Mini Cheesecakes

Big hit! I made these in mini-muffin pans, had to cram the vanilla wafer into the paper and added the filling. Made quite a few, bite sized cheesecakes. The proportion making it this way is almost have cookie to filling, but no complaints. Baking time was about 16-18 minutes. I also added lemon zest, wonderful!

Scottish Shortbread III

I made cookies from this recipe, used molds and baked a shorter time, about 18 minutes, but still too long, were too brown. Will try 10-12 minutes for small cookies next time. Dipped the tops in melted chocolate, a hit!

Light and lovely, quick and easy, will experiment with cinnamon or nutmeg, maybe add pecans next time. No need to wait 30 minutes, these cooked well right away.

Guinness® and Chocolate Cheesecake

I couldn't find my springform pan so baked this in 2 storebought chocolate cookie crusts, baked for 35 min, and they were a big hit! I put whipped cream on when I served it, hid a few cracks in the top since I wasn't able to use a waterbath to bake them in. Everyone raved!

Stuffed Jack-O-Lantern Bell Peppers

This is such a darling idea! I didn't use the filling recipe, didn't have all the ingredients but made a simple ground beef and rice with tomato paste filling. They were so cute my daughter took pictures and emailed them! I plan on trying this with red peppers to make Santa's for the holidays. A keeper!
