Black Bean Spread

This is amazing! Very tasty! I added some leftover spinach I had from dinner and substituted Fat Free Sour Cream for the cottage cheese. Very Tasty and I will definitely be making this for the holidays to share! Too good to keep to myself!

Banana Chip Muffins II

These are awesome muffins. I didn't think they were chewy at all. In the essence of making them slightly healthier than they already were, I used half whole wheat flour and half white flour, half light brown sugar and half white sugar, and added some nutritional yeast as well. Cooking them slightly longer than 18 minutes made the outsides slightly crispy and the insides nice and soft (but not chewy). This will be my go to muffin recipe from now on!!

Sweet, Sticky and Spicy Chicken

This might be the BEST recipe that I've ever made from allrecipes! FANTASTIC! I did double the sauce to have more for the rice and broccoli side dishes. I also added chopped green onion to the sauce and excluded the salt and pepper on the chicken itself. I didn't flour the chicken either.

Colleen's Slow Cooker Jambalaya

This was delicious! The only change I made was the canned tomatoes. I thought I had regular diced tomatoes in the pantry but I had diced with basil, garlic and oregano and I think it added nicely to the overall flavor of the dish. I also cut the recipe in half since there are only two of us and it made just enough for us to have seconds. I'll definitely be making this again!

Modenese Pork Chops

This was outstanding, so much so that we wanted more when we finished! I used fresh rosemary instead of dried and added a few button mushrooms during the last 10 min. of simmering because I needed to use them up. I will definitely be making this again!

Thanksgiving Leftovers Stuffed Shells

I didn't have a stand mixer or paddle attachment so I had to mix everything by hand and it was slightly difficult. Next time I will wait for the cream cheese to soften a bit. I also used mild cheddar instead of mozzarella and 2 cans of Cream of Chicken soup (1/2 cup on the bottom & the rest on top) as we really like sauce in this house. Some corn would have gone a long way in adding flavor, but over all this was a really good leftover recipe!

I wish I had read the reviews prior to making this. It was definitely too salty. I would absolutely cut the salt in half next time. Flavorful but way too much salt.
