Quick and Easy Pizza Crust

Reviewed: Aug. 31, 2014
This was amazing and FAST. I had no idea you could make such a great pizza crust in half an hour. I substituted 1/4 cup of semolina for all-purpose flour, which I used instead of bread flour. This was excellent!

Country Seed Bread

Reviewed: Jun. 20, 2014
This bread was easy to make and tasted amazing. I used the bread machine to make the dough, as per suggestions of others, but when I took it out of the bread machine it looked small sitting in the greased glass baking dish. I decided to let the dough rise for about an hour and it more than doubled in size before baking. I am very glad I did this last step prior to baking since it probably would have been very dense otherwise. I baked it at 400 for the first 5 minutes and then finished it at 350 for the last 25. My main suggestion to those of you whom use the bread maker for the dough and then bake it in the oven is let it rise first! : )

Chef John's Cheesy Crackers

Reviewed: Mar. 21, 2014
I feel like I must have done something wrong since they have not crisped up even after cooling... Maybe I didn't cook them long enough; they looked done though. They seem to have so much potential. I wish they came out as good as the video's. *does anyone know how to dry them out more, that for sure will work? Maybe the oven or microwave, but I don't want to mess them up.

Vegan Black Bean Soup

Reviewed: Mar. 13, 2013
This is a nice, easy, delicious recipe. I have made it twice now and think it is wonderful. The only change I made was that I added salt at the end to enhance the flavors. I served this with avocado, green onions, and for the non-vegans manchego cheese. I would have substituted the manchego with Queso Fresco, a more mild option. I had no cilantro, but that would have been a nice addition.

Slow Cooker Chicken Mole

Reviewed: Mar. 1, 2013
My family really loved it, but I didn't prefer it (this is weird since I'm the one who loves everything). It was good, just not my favorite. I felt like it could use a little something, just didn't know what. This was my firs time making a mole though. I will certainly try again.

Sopapilla Cheesecake Pie

Reviewed: Feb. 20, 2013
So I did do this different than the recipe, but the idea was great! I hate crescent rolls normally, but using them for this was simple and delicious. I halved the recipe and eye balled the butter and cinnamon sugar mixture on top. I did not add the honey.

Slow Cooker French Onion Soup

Reviewed: Feb. 15, 2013
Awesome soup! I used vermouth, that is what I had on hand, instead of sherry. I also found out, too late, that I had no beef stock so I had to use bullion ( a mixture of beef and chicken), but it was still amazing. I made the onions the night before and kept them in the refrigerator until the next morning, but it worked out perfect, especially with having to use hot water and bullion instead of cold or ambient broth.

Roasted Okra

Reviewed: Feb. 10, 2013
I love okra, but my husband doesn't. He hated it, I loved it! My 4 year old loved it too, but she also likes okra. I think you really need to like okra to eat okra. It was still a little slimy, but not like it usually is when I cook it. I'm glad I tired it this way, I certainly will eat it like this again.

Sesame Noodles

Reviewed: Nov. 4, 2011
This sauce was a wonderful addition to the spinach noodles I used. When making the sauce I used half the sugar, half the oil, and added about a half teaspoon of cornstarch disolved in water to thicken it. I cooked the sauce a lot longer than suggested as well. A nice addition to the pasta and sesame seeds was some steamed brocoli and mushrooms! This was served with teriyaki chicken, my own recipe.

Roasted Duck

Reviewed: Jun. 16, 2011
I love this recipe. It is so simple, but when ever I make it, it turns out amazing! I used light olive oil instead of butter the first time I made it, but the duck is so fatty that it was unnecessary the next couple of times. Great recipe!!

Easy Granola Bars

Reviewed: Oct. 27, 2010
honestly, I have not tired these yet (had some of the raw "batter")... I am in the process of baking them, but it 10:30pm and I have to wake up at 6:00am. I really look forward to trying these, but I found this recipe under healthy treats. There is no way these are healthy unless you cut and add a bunch of different stuff. They were extremely easy to make, which I loved! I look forward to these. Thank you for the idea!

Chicken Jalfrezi

Reviewed: Aug. 19, 2010
We all loved this dish. I cooked it much longer than it said to, but it was really amazing. Since all I had on hand for the chicken was bone in skin on chicken thighs it needed to be cooked longer I just took off the skin. I served it over basmati rice, used butter instead of ghee, added green peppers like one person mentioned, and it was great.

Baked Macaroni and Cheese III

Reviewed: Aug. 19, 2010
I used double the milk and sour cream and it was really good. I just wish that it was creamier. I don't think I had enough cheese, cheddar or monetary jack. We threw out our cheese grater and I had to cut the cheese in small thin slices to give the texture of the shredded cheese which took a long time to do. I also cooked it longer because it seemed not cooked in the middle, that may have caused the lack of creaminess.

Moussaka

Reviewed: Aug. 4, 2010
This dish is certainly missing something. I could not even get though one piece without feeling sick. I am pretty sure if you like Moussaka this is a great recipe, but with never having it before, I did not really know what to expect. I think it needs some crunch to it, or something firmer in it. I might be good mixed in some macaroni or something. On a good crusty bread even. Some aspects of this dish were awesome. The meat was excellent and the eggplant I absolutely loved ( I really like eggplant). WAYYYY to much sauce. If you cut it in half... that is how much I use in a whole vegetable lasagna. Also, it took way too long to make. Three hours!!!

Baingan Bharta (Eggplant Curry)

Reviewed: Jul. 28, 2010
Everyone, including my 1.5 year old liked this. She loves eggplant but has been very picky a bout foods with a lot of flavor lately. I decided to make this anyway, my husband and I love Indian cuisine. Because it was such a hot day instead of baking the eggplant I added olive oil to a frying pan and placed the Japanese eggplant, that I had cut into large chunks, into the hot oil and cooked until tender flipping as not to burn it. I had to make the garlic ginger paste using 3 cloves of garlic, ground ginger and salt. I used a cubanelle paper in place of the jalapeno and added chili powder for spice.

Shakshuka Middle Eastern Breakfast Dish

Reviewed: Jul. 12, 2010
I think this was wonderful. My husband even liked this and he is pretty picky about breakfast dishes. I am always looking for new ideas for breakfast and I very happy I stumbled upon this. I think that the bread is necessary and maybe some bacon for a little crunch. I liked it without the bacon but the bread was needed. I black pepper and used diced canned tomatoes that I pureed since I had no crushed and have made this twice now.
