Pickle Rolls

Reviewed: Apr. 15, 2005
Delicious. Every time I prepare this one someone asks for the recipe. Its quick and easy and I almost always have all the ingredients on hand. I've used flavored cream cheese spread and this really adds flavor. If making for a potluck allow your pickles to drain on a paper towel for a few minutes before assembling. This keeps them from making your rolls soggy. Laurie

Ultimate Breakfast Casserole

Reviewed: Jan. 5, 2003
Great basic recipe. I followed the other reviewers advise and only used 8 ozs of sour cream. I also used sausage, which I browned and drained, instead of the ham, and added more spices. My hubby loved it. I didnt feel the need to add all the extra fat and caloried by drizzling on the butter so i just added about 1/4 cup of cheese on top and cooked a few minutes longer. I will definitely make this one again. Laurie H.

Chrissy's Sweet 'n' Sour Tomato Salad

Reviewed: Aug. 9, 2002
This recipe was great. We had LOTS of extra fresh tomatoes from the garden and I wanted a new way to fix them. I used olive oil instead of vegetable and added 3-4 generous shakes of Mrs. Dash's Tomato Basil and Garlic seasoning blend. I will definitely make this one again. Laurie H.

Beef Potato House Pie Casserole

Reviewed: May 16, 2002
This is a great basic recipe. My hubby is a meat and potatoes guy so by changing this a little he loved it. I added a small can of chopped mushrooms, and a 1/2 can of cream of muchroom soup. You can use more of the soup if you like but it may make the consistency thinner. I also used a box(2packages)of the herb and butter flavored instant potatoes instead of boiling the 6 large. I also added the pretty hefty layer of Velveeta after the first layering of the meat and potatoes, and finished the dish with shredded cheddar cheese then baked until the cheese was golden brown. Will definitely make again. Laurie H.

King Ranch Chicken Casserole I

Reviewed: May 8, 2002
This was a great recipe. I would be a wonderful dish to take to a gathering. I used boiled chicken breasts that I shredded in my food processor. Then layered the chips and mixed ALL the other ingredients together(saving 1/2 the cheese). Poured it over the chips, and then added the remaining cheese. It was great and seemed to really stick together better than layering the chicken would have. Will make this again and again. Laurie

Awesome and Easy Creamy Corn Casserole

Reviewed: May 6, 2002
Hubby went to the grocery store and purchased too much can corn, so I was looking for a different way to fix it. This recipe turned out better than I thought. It was easy to make and tasted great. I used a square 8x8 glass baking dish, so I cooked it for about 55min. instead of 45min. I will definetly make this one again. Laurie H.

Chicken Cheese Ball

Reviewed: Apr. 11, 2002
This was GREAT!!!! Took it as a healthy snack to our childbirthing class. I changed to lite cream cheese and added a 1/2 cup finely shredded reduced fat cheddar cheese, and served it with multi grain and wheat crackers. I will make this over, and over again. Laurie H.
