Cathy's Banana Bread

This is just wonderful! I have made this banana bread many times and it turns out great every time! My husband just loves it. The only changes I made was Butter instead of margarine and reduce the sugar to 3/4 cup. The ingredients are basic and easily available in the Dominican Republic where we winter and often end up with overripe bananas.

No Knead Beer Bread

This was fabulous! I made this a couple of weeks ago to take along to my son's Oktoberfest party. It was a big hit! I made a slight change from the original recipe though. I substituted one cup of all purpose flour with one cup of Spelt flour and added a 1/2 tsp of yeast. The texture was wonderful and the bread was anything but bland. I'll make this again and again!

Bloody Mary Short Ribs

I made this a couple of days ago and I absolutely loved it. I used Clamato juice, because that's all I had and I added 2 cloves of garlic. Otherwise I followed the recipe and it was delicious. I made it in my convection toaster oven in a covered glass dish. I will make it again and I have already given the recipe to some friends.

Rosemary Chicken Couscous Salad

This is the most wonderful Couscous Salad! It's on my " to do list" whenever my oldest son visits from Japan. I didn't change any of the ingredients and it is perfect just the way it is posted. The first time I made it, I didn't have any dried tomatoes on hand and used fresh ones. This also worked very well. Five stars!

Ladyfingers

Perfect! I couldn't find lady fingers anywhere in the grocery stores. Discontinued!! I needed a layer of lady fingers for a plum cake and just spread the mixture on a 12 inch pizza pan. It was perfect and did the job.

Baked Scallops

I did not care for this recipe. II totally followed the ingredients list. Even though I did not add any salt whatsoever, it turned out to be so salty. I will never make this again!

Black Bean and Couscous Salad

Great recipe! I made a mistake and put 2 Tbsp of vinegar in instead of the 1/2 and I also put more lime juice, but it was just right. I am not that keen on Cilantro, hate the smell, but I used it this time and it pleasently surprised me. This recipe is a keeper!
