Oven-Roasted Asparagus

WAY too much salt! (That's because the parmesan cheese is also salty.) Even 1/2 tsp. was too much for us. Otherwise, the recipe is great!

Winter Fruit Salad with Lemon Poppyseed Dressing

I made this salad exactly as given and it was great! (I think it is more interesting if used with a lettuce blend.) Also, if you want to make the salad a couple hours ahead of time, put the diced fruit on the bottom of the bowl, drizzle a little of the dressing on the fruit, stir,(so the fruit doesn't turn brown) and then put the lettuce, then everything else on top. Pour the dressing on and toss when ready to serve.

Chicken Milano

This recipe was very good. (I used 1/2 & 1/2 instead of the heavy cream - works the same and has less fat & calories.) Next time I'll double the sauce and add fresh mushrooms. I did use sun-dried tomatoes per the recipe, but they tasted too strong and a little sour in the final result. I'll try the ones in oil next time.

Bottom Round Roast with Onion Gravy

My husband and I loved this recipe. But, as advised by other reviewers, I seared the meat, added about 3 cloves of minced garlic with the onions, used 2 Tablespoons flour to thicken, and then added a packet of no-sodium beef boullion and salt and pepper to taste to the gravy.

Best Carrot Cake Ever

Since some of the reviewers had mentioned they thought it was a little bland, I added 1/2 tsp. cloves, 1/2 tsp. allspice, 1/2 tsp. nutmeg, and 1/2 tsp. mace. (This last one is optional.) I baked it in a 9 x 12 lasagne pan at 350 degrees for an hour. My husband and I think it's the best carrot cake we've ever eaten! Carole from Monroe Twp., NJ
