This recipe was excellent! I did make some minor adjustments. Since I did not have a can of diced tomatoes with olive oil & garlic, I instead diced some fresh tomatoes and tossed it with some minced garlic and extra virgin olive oil before adding it to the pan. I also omitted the basil since I did not have any. And I used boneless skinless chicken breasts which I cut in half lengthwise to help thin them down, instead of the cutlets. Rather than mixing the garlic powder, salt, and pepper with the bread crumbs; I instead used garlic salt and freshly ground black pepper which I added to the egg wash before dipping the chicken breasts. I also did add a bit more tomato sauce and olive oil as I simmered the sauce to create more sauce. It turned out perfectly and had a nice spicy flavor. My boyfriend loved it and took the rest of the leftovers with him to lunch today. I will definitely be making this again.
