Insane Oven Beef Ribs

Substituted wheat beer for read wine. Also added a few dashes of ginger, a squirt of Sriracha and about 1/4 cup ketchup. First thing is this seems way too thin. Next time I would heat it on the stove top and then add a tablespoon of corn starch mixed with a little cold water, and then let that bubble for about five minutes. Then set aside to cool down. This should thicken it a bit.

Baked French Fries I

I added a 1/2 tsp of Cayenne to the mix. Nicely spicy!! Additionally, I used a mandolin and cut them into traditional fry shape. Make sure you spread them out over a large sheet as, while mine were cooked fine, they were not crispy in the least, despite my cooking them at 450 for 30 minutes (coincided with cooking some Van de Kamps beer battered fish!!).

Tartar Sauce I

I don't buy tarter sauce at the store anymore after finding this one on the Internet! So easy to make it fresh, and a lot cheaper when you factor in the price of ingredients. I added 1 tsp of dill weed and modified the onion to use 2 large minced green onions (including the white). As for the citrus, I either use Meyer Lemon from my tree, or have used Lime Juice in the past. These additions give it an intense flavor with all sorts of layers, and not just some white stuff that goes on fish. Used it in a ham sandwich last week. Was awesome!!

Wheat Crackers

Pretty simple recipe. Made mine with straight white flour as I didn't have any wheat flour in house. Also, seemed to have to tweak my cooking time by a good 20 minutes to get them actually crispy, though some of that might be because of my oven. Never really got totally brown colored as I expected. Also, added a bit of dried Dill weed because I was serving this with an herbal tuna salad (also from here on allrecipes.com!!)

Herbal Tuna Salad

This was pretty good! I'd made it a long time ago, and forgotten how it was, so decided to make it again. Didn't have any sour cream so substituted Greek yogurt. Also, I decided to add diced green onions (four for this recipe size) because I love green onions, and I felt the lemon would be too sweet (Meyers lemons). I suggest combining the ingredients as you put the eggs to boil. This gives the flavors a chance to meld. Then, once the eggs are done let them cool for an hour before blending it all into a "sauce." Combine remaining ingredients and then let it sit in the refrigerator over night to set up a bit. Served with home made dill crackers for an awesome lunch!!

Acorn Squash

Hadn't made Acorn Squash in a very long time and this was the first recipe that came up in a Google search. Very happy it did! Couldn't have been more simple to prepare. Cooked very tender to the point of being able to eat everything except the skin. Knocked off one star because while one shell is very well seasoned with the butter and brown sugar, the one shell that's on the top, isn't because it's upside down. Still going to add this to my Recipe Box!!
