Plum Blueberry Upside Down Cake

MMmmm! Very moist cake and sweet yet tart plums! Delicious :) I added a little more brown sugar and one tbs more butter to the pan to bubble. I didn't have blueberries but it was fantastic! The plums were caramelized around the edges and had a slight chew. The cake was so moist. My husband and son loved it, so did I. The only thing with the bake time was it wasn't done in 40mins. had to add about 15 more mins till the toothpick came out clean! I will be making this again for sure.

Eggplant Snack Sticks

Not our favorite recipe for eggplant. Seemed to have to broil them for at least 2 min longer to really get that crunch. But even at that some weren't as done as others. The wheat germ was a good idea though. Just not right for our taste buds.

Miss Betty's Super Quick Dinner Rolls

Five stars for Quick, Easy and Moist rolls! So soft!! I added 1/2c white and 1/2 wheat (not the self rising) (I made my own and used the 1c flour and 1 1/2 tsp baking powder and 1/2 tsp salt) I also tried the mayo for one batch and then Extra Virgin Olive oil for another (2tbs) and they came out great too. I will make these again and again. You can really spice them up with italian herbs and cheese or you can throw a dash of sugar in there and then use a fruit spread on top! YUMMY!

Potato Chips

WOW! I was told that these were better than store bought!! My family loved them. Made them with white potatoes and sweet potatoes! Healthy snack in comparison to bagged chips!! Amazing idea that they would come out of a microwave crunchy and curled like kettle chips. I used the wide blade of a tall cheese shredder, it was quick and delicious. Thanks for the interesting recipe!

Banana Oatmeal Cookie

My husband liked them especially with a little white icing. My one yr old son liked them too. I added a bit more spices to make them really have some flavor. A little bit of cloves, and some pumpkin pie spice. The taste was very good; you can taste both the banana and the spices. Can't tell there is oatmeal in them either. I, however, do not like my cookies with a cake texture and this is how these came out for me. They were very soft and moist. I called them little cake droppings after I had frosted them! Will probably make again.

Oatmeal Waffles

Light and Fluffy with a crunchy crust! Delicious! I doubled the recipe so I would have enough to freeze for next weekend. I added a tbs more brown sugar, used half white flour and half wheat flour and added about 1/4c of toasted wheat germ. These were the type of waffles that you don't even have to add anything to the top...you can eat them plain and they still have a great taste!! My husband said that they were very filling but not a dense waffle and they actually have flavor! I think the amount of cinnamon was great in these! My one year old LOVED them! What a nice change from the regular waffles...will make all the time now!

Chocolate Chip Oatmeal Cake

5+++ stars! I made this for my son's 1st birthday! I actually made two batches for all the people. Put them in 9x13 pans and I omitted the nuts and used the choc. chips on top. I added 2 tbsp of cocoa powder... it is sooo rich, chocolatey and moist! I had people keep telling me how wonderful this cake was even after they left the party! It really isnt a dense cake to me... its very moist and wonderful warm! I frosted it with Happy Birthday and he ate a whole piece!! A winner for many birthdays to come!

Surprise Banana Cake

Great cake... slightly dense but delicious! I actually added 1 tsp of baking powder per another reviewer's comments, worked well. Instead of frosting I added about a cup of chocolate chips sprinkled on top before I put it in to bake. The chocolate really worked well with the banana. Yummy!!

Cod au Gratin

Made this dish for my mother, husband and son. My son liked it however my mom thought it was runny and my husband said it was bland. I did spice it up more than the recipe called for too! I however thought it was good. It was easy and a nice change from the regular baked cod. I think I will try it again but really take it up a notch with spices and maybe throw in some veggies like a casserole! Thanks for the recipe.

Beer Bread I

I think the bread was similar to the expensive boxed breads. I used my husband's Killians Red and I can taste it very much in the bread after baked. Im not sure its my favorite.. but I know my husband really likes it. It is slightly dense and little crumbly. Yummy crust like a corn bread. Moist and good with butter on it. Very easy to make! Probably will make it again for my hubby...maybe try a different beer and some cheese! Thanks for the recipe.
