Creamy Chicken and Wild Rice Soup
Fantastic flavor and heartiness! My 8 & 9 yr old picky eaters loved it. I had regular wild rice so I just cooked it separately. I sauteed a medium diced onion and 2 Tbs minced garlic in olive oil, then added a 1/2 cup of white wine and reduced a bit. Also, cut back the butter, flour and used skim milk. I added a Traders Joe's Cream of Mushroom soup because I didn't have mushrooms on hand and I love the flavor mushrooms add to a cream soup. Served this soup with crusty bread. I will make this over and over again!

Summer Squash Bread
Made muffins instead of bread for an on the go snack and school lunches. Was a tiny bit short on squash so I grated about 1/2 cup of apple to make up the difference. Used whole wheat flour for 1/3 of the total flour amount called for and the rest all purpose. Used all applesauce instead of oil and reduced nutmeg by 1/2 tsp. sprinkled a bit of brown sugar on top before baking at recommended temp for 20-25 minutes. Totally fantastic - everyone loved them!

Slow Cooker Chicken Taco Soup
This recipe is a dream come true because you can use it so many ways. I used it as advertised (a soup) the first night. For leftovers, I took a slotted spoon to let the juice drain off and used it as the filling in a taco shell - awesome! For another dinner I drained off the juice again and used it to top a plate of tortilla chips and had awesome nachos. I bet it would be great as a baked potato topper, too. I only had dark beer in the house at the time of preparation so I just used broth and it was still fantastic!
