Burrito Pie

I thought this dish was ok. Hubby ate it, but I noticed the leftovers stayed in the fridge for quite a while so it definitely wasn't a huge hit. I don't know about anyone else, but it kind of reminded me of a 7 layer dip. So, not bad, but not superb either.

Grandma's Orange Milk Sherbet

I didn't do the pineapple and just put everything else in the ice cream maker and was truly amazed at how delicious this was! Kids, hubby, and I all loved it. The first time I made it they were so eager to eat that I stopped the ice cream maker early- the slushy consistency that resulted was like Sonic's orange cream slush. OMG so good! Completely frozen it was like a delcious orange creamsicle made into ice cream. So yummy!!! Thank you!!!

Rosemary Lemon Grilled Chicken

Substituted olive oil for the butter and used half of what was called for to make it a little healthier. Still very tasty. Very fresh and vibrant. Thanks!

Easy Spinach Lasagna with White Sauce

Made this as written and it was pretty good. Made it a 2nd time time and sauteed the mushrooms and spinach with some garlic, salt, pepper and it made such a big difference! Think it just needed that to give it a little extra "umph." Also 2nd time added veggie crumbles on top on the spinach mixture for a little extra protein and substance. Loved the ease of this recipe and thought it was a great starting point. Thanks!

Cool Whip Cookies

I love this recipe and totally forgot about it until I saw it on here. I made these in miniature form last weekend for a baby shower dessert buffet and they were a huge hit. I used strawberry cake mix (friend's having a girl) and felt a little silly that so many people wanted the recipe and I'm like, well, you only need 4 ingredients so I'll give it to you right now. Chilling the dough makes it A LOT easier to work with if you're looking for pretty cookies. I also had success using a mini cookie scoop that has a release button (pressed it a couple times and then just shaped a little with my fingers). Because my little one's "helped" make these, I used egg beaters so I wouldn't worry about little fingers going for a taste of the raw dough. Still turned out great with the egg beaters (wasn't sure if that extra fat would have made a difference). Totally delish! Thanks!

Mini Cheesecakes

Made these for a baby shower and they were really easy and pretty tasty. I found mini Nilla wafers and just dropped those in the bottom as per other reviews (I used mini muffin pans). Turned out very cute- especially with a drizzle of cherry pie filling glaze and a single cherry. The filling was yummy, but I agree that a traditional graham cracker crust (or an Oreo crust if doing chocolate) would have knocked these out of the park (the Nilla wafer was good, but a little blah in comparison).

Baked Potato Soup

Awesome. I modified but only to make it vegetarian. Used soy bacon so I sauteed w/a drizzle of olive oil in the beginning- if you've had soy bacon, you know why =). Also used veggie stock and subbed vegan sour cream and soy milk for the half & half. Was delish and even though I doubled the recipe there's not much left. 1 year old & hubby loved it. 4 year didn't (but this is a picky 4 year old). Thanks!
