Blueberry Breakfast Cake

Very good cake. I forgot the salt (no big deal) and tossed the slightly wet berries into some flour/sugar mixture to keep them from sinking. Added 1 Tbsp. fat free sour cream. Used pecans and orange zest instead of walnuts and lemon zest. It was moist and tasty. Might use a bit more sugar in the batter or more crumb topping next time. Not overly sweet - although that's not a bad thing. Very tasty! Will make again.

Pumpkin Bread Pudding

Just awful. Followed the recipe exactly. Dessert is my specialty and this was an absolute flop. Tasted so bad I had to chuck it out. :(

Easy Bacon and Cheese Quiche

Tangy Honey Glazed Ham

The glaze was easy to make and delicious! Bought a shank half ham at Target which was fantastic (Archer Farms), juicy and not too salty. Cooked the ham in a 325*F oven, tented with foil and a small amount of chicken broth in the pan to aid moisture retention. Glazed it the last hour - every 15 to 20 minutes. No need to by Honeybaked when you have this glaze recipe. AWESOME ! Thanks for sharing!!

Bean Soup

Soup was great. Of course, I modified slightly. Used 1.25 cups each carrots & celery, a whole diced onion. 2/3 of a large meaty smoked ham shank, omitted the diced ham as it was not needed. Soaked overnight, drained soaking water and added 4 cups chicken broth + 3 cups water. Although there was not much added salt, I would omit it next time as the ham shank added the correct amount without adding extra. Used much more fresh cracked black pepper that called for 10-15 turns of pepper grinder. Smashed about 1/2 the beans with a potato masher at the end for better texture. DELICIOUS!

Amazingly Easy Irish Soda Bread

Very easy and delicious. Made this for St. Patrick's Day dinner for the family. Everybody LOVED it and as a bonus, it was fantastic as thick slabs of toast the next day with jam. AWESOME! The loaf got a bit brown in the oven at 375*F so next time I will reduce oven temp to 350-360*F and back for longer. Will be making this again soon!

Creamy Hot Cocoa

Excellent - modified. Per large mug, add 1 cup 2% milk, 3 Tbsp unsweetened cocoa, 1.5 Tbsp sugar, dash salt, 3 Tbsp boiling water. Follow directions as noted. Top with whipped cream & tiny semi-sweet morsels. Decadent. Richer than original recipe, and not overly sweet. No need to add half and half.
